This loaded sweet potato was a bomb!
For the first time I used smoked tofu instead of natural for the (vegan) skagen salad and it gave so much extra flavour!
Besides smoked tofu, I also freestyled a bit the rest of the ingredients - celery, pickles, dill, red onion, horseradish, lemon zest & juice, vegan mayo & cream fraiche and, of course, the start of this show - tångcaviar (fake sea w**d caviar).
Such an easy recipe yet so many happy faces! 🧚♂️

Made my favorite tofu scramble and served it over a toast. Topped with avocado & ”bacon” mushrooms. Some baked beans, rocket salad and pickled cabbage by the side.

I’m not gonna pretend I made this recipe, I just took a random pick on the Pinterest for double chocolate muffins and then separately checked how to make the frosting. Used my home made apple sauce for the egg replacement.

10/22 (today) purple cauliflower soup. I should have probably steamed the cauliflower instead of oven baked to get more color 💜.. but oven baked gives so much more flavour!
10/21 purple carrot hummus. Those beautiful carrots were steamed and the 💜 color was on fire!
10/20 purple potato mash! Purple potatoes are my favorite thing though so hard to get. If you know where I can get some seedlings for spring, please let me know 💜

Sundays we enjoy a good breakfast 😎my go to tofu scramble recipe always include some fridge veggies, tahini, mustard, turmeric, white pepper, onion & garlic powder, nutritional yeast, plant milk or cream, some greens like dill or parsley, and a squeeze of lemon at the end 🍋
When I said I will learn how to bake, I meant it 🙋🏼♀️ This Apple Coffee Cake recipe from sounded like an easy enough start in this process of mine, so I went ahead with this one. I just skipped the crumble topping and used natural vegan youghurt mixed with some maple syrup and vanilla. (I would have used a vanilla whisp cream, but looks like it’s not that easy to find some things out here 🏡 so I had to improvise)
Overall, very happy! I pulled myself together and followed every gram written in the recipe, so there was no space for errors. Those who know me, following recipe is quite an achievment for me 😅
