Friends and family coming over for Easter?
Here's a delicious Sweet Potato dip that's perfect for an Eat Real spread! Ingredients ๐Ÿ  750g sweet potato, peeled, roughly chopped ๐Ÿ  2 tablespoons raisins or sultanas ๐Ÿ  2 garlic cloves, crushed ๐Ÿ  1/2 teaspoon harissa paste or chilli sauce ๐Ÿ  1 teaspoon each ground cumin, ground ginger and ground cinnamon ๐Ÿ  1/2 teaspoon caster sugar ๐Ÿ  1-2 tablespoons red wine vinegar ๐Ÿ  1/4 cup (60ml) olive oil, plus extra to drizzle ๐Ÿ  2 large rounds of Lebanese flatbread ๐Ÿ  1 teaspoon mild paprika or sumac ๐Ÿ  Chopped coriander leaves, to garnish METHOD ๐Ÿ  Cook the sweet potato and raisins in a saucepan of simmering salted water for 15-20 minutes until soft. Drain well and roughly crush with a fork. Add the garlic, harissa paste or chilli sauce, cumin, ginger, cinnamon, sugar, vinegar and 1/2 teaspoon salt, and mix well. Gradually stir in the olive oil, then set aside to cool. ๐Ÿ  Drizzle the sweet potato with a little extra olive oil, dust with paprika or sumac, and scatter with coriander leaves. ๐Ÿ  Serve with your favourite Eat Real snack and enjoy! #eatrealnz #glutenfree #vegan #freefrom #plantbased #healthiersnacking #realingredients

Hereโ€™s a twist on the classic hummus that uses edamame in place of chickpeas and goes perfectly with Eat Real Veggie Straws: Ingredients: ๐ŸŒฑ 2 cups frozen shelled edamame (thawed) ๐ŸŒฑ 2 tablespoons water ๐ŸŒฑ 3 tablespoons rice vinegar ๐ŸŒฑ 2 tablespoons tahini (sesame seed paste) ๐ŸŒฑ 2 tablespoons extra-virgin olive oil ๐ŸŒฑ 1 clove garlic, minced ๐ŸŒฑ ยฝ teaspoon kosher salt (plus more to taste) ๐ŸŒฑ ยผ teaspoon ground black pepper (or to taste) Method ๐Ÿ‘‰๐Ÿผ In a food processor combine the edamame, water, rice vinegar, tahini, olive oil, garlic, and kosher salt and pepper, and process until smooth. ๐Ÿ‘‰๐Ÿผ Season with additional salt and black pepper to taste. You just have to try this delicious Spicy Peanut Hummus - it hits the spot on a lazy summer afternoon spent hanging out with mates ๐Ÿ™Œ๐Ÿผ Ingredients: ๐Ÿฅœ 1 tablespoon olive oil ๐Ÿฅœ 4-5 cloves garlic, crushed ๐Ÿฅœ 2 teaspoons cumin ๐Ÿฅœ 2 teaspoons coriander ๐Ÿฅœ 440g can chickpeas, rinsed and drained ๐Ÿฅœ 1/2 cup peanut butter - smooth or crunchy ๐Ÿฅœ 2 tablespoons sweet chilli sauce ๐Ÿฅœ 1/4 - 1/3 cup water ๐Ÿฅœ Turkish bread or pita bread, toasted, for serving ๐Ÿฅœ Fresh vegetables, cut into strips, for serving Method: ๐Ÿ‘‰๐Ÿผ Heat the oil in a small saucepan and gently saute the garlic and spices over a low heat for 1-2 minutes or until fragrant. ๐Ÿ‘‰๐Ÿผ Add the chickpeas and cook a further minute then transfer to a food processor with the peanut butter, chilli sauce and water then process until smooth. ๐Ÿ‘‰๐Ÿผ Spoon the hummus into a serving bowl and chill until required. ๐Ÿ‘‰๐Ÿผ Place onto a serving platter and serve with chopped vegetables and Eat Real Hummus chips for dipping Eat.
