Friends and family coming over for Easter?
Here's a delicious Sweet Potato dip that's perfect for an Eat Real spread!
Ingredients
๐ 750g sweet potato, peeled, roughly chopped
๐ 2 tablespoons raisins or sultanas
๐ 2 garlic cloves, crushed
๐ 1/2 teaspoon harissa paste or chilli sauce
๐ 1 teaspoon each ground cumin, ground ginger and ground cinnamon
๐ 1/2 teaspoon caster sugar
๐ 1-2 tablespoons red wine vinegar
๐ 1/4 cup (60ml) olive oil, plus extra to drizzle
๐ 2 large rounds of Lebanese flatbread
๐ 1 teaspoon mild paprika or sumac
๐ Chopped coriander leaves, to garnish
METHOD
๐ Cook the sweet potato and raisins in a saucepan of simmering salted water for 15-20 minutes until soft. Drain well and roughly crush with a fork. Add the garlic, harissa paste or chilli sauce, cumin, ginger, cinnamon, sugar, vinegar and 1/2 teaspoon salt, and mix well. Gradually stir in the olive oil, then set aside to cool.
๐ Drizzle the sweet potato with a little extra olive oil, dust with paprika or sumac, and scatter with coriander leaves.
๐ Serve with your favourite Eat Real snack and enjoy!

Classic hummus that uses edamame
Hereโs a twist on the classic hummus that uses edamame in place of chickpeas and goes perfectly with Eat Real Veggie Straws:
Ingredients:
๐ฑ 2 cups frozen shelled edamame (thawed)
๐ฑ 2 tablespoons water
๐ฑ 3 tablespoons rice vinegar
๐ฑ 2 tablespoons tahini (sesame seed paste)
๐ฑ 2 tablespoons extra-virgin olive oil
๐ฑ 1 clove garlic, minced
๐ฑ ยฝ teaspoon kosher salt (plus more to taste)
๐ฑ ยผ teaspoon ground black pepper (or to taste)
Method
๐๐ผ In a food processor combine the edamame, water, rice vinegar, tahini, olive oil, garlic, and kosher salt and pepper, and process until smooth.
๐๐ผ Season with additional salt and black pepper to taste.

Spicy Peanut Hummus
You just have to try this delicious Spicy Peanut Hummus - it hits the spot on a lazy summer afternoon spent hanging out with mates ๐๐ผ
Ingredients:
๐ฅ 1 tablespoon olive oil
๐ฅ 4-5 cloves garlic, crushed
๐ฅ 2 teaspoons cumin
๐ฅ 2 teaspoons coriander
๐ฅ 440g can chickpeas, rinsed and drained
๐ฅ 1/2 cup peanut butter - smooth or crunchy
๐ฅ 2 tablespoons sweet chilli sauce
๐ฅ 1/4 - 1/3 cup water
๐ฅ Turkish bread or pita bread, toasted, for serving
๐ฅ Fresh vegetables, cut into strips, for serving
Method:
๐๐ผ Heat the oil in a small saucepan and gently saute the garlic and spices over a low heat for 1-2 minutes or until fragrant.
๐๐ผ Add the chickpeas and cook a further minute then transfer to a food processor with the peanut butter, chilli sauce and water then process until smooth.
๐๐ผ Spoon the hummus into a serving bowl and chill until required.
๐๐ผ Place onto a serving platter and serve with chopped vegetables and Eat Real Hummus chips for dipping

'Tis the season to entertain... So here's a deliciously easy dip to make when you have a few hungry mates coming round. ๐
3 Ingredient Vegan Queso
Total time: 5 minutes | Servings: 6
Ingredients:
๐ 1 cup cashews, unroasted
๐ 1/4 cup chunky mild salsa
๐ 1 TBS taco seasoning
๐ 1/2 tsp ground turmeric (optional, for color)
๐ Sliced jalapenos and coriander
Method:
๐๐ผ Add all ingredients to a high-speed blender and combine with 1/3 cup of water. Let blend on medium until fully mixed
๐๐ผ To make it even more creamy, add 1/4 cup more water and blend until completely soft
๐๐ผ Season with salt to taste
๐๐ผ Garnish with jalapenos and coriander
