A NEW lockdown recipe from Lynn our baker since day one at RIpe deli. She’s been making these delicious LEMON & SULTANA SCONES at home in lockdown and they come with a top score from Brian her husband. Happy baking 🍋🍋🍋
2 cups flour
3 tsp baking powder
Pinch salt
90g butter
1/2 cup milk
Zest of a lemon
1/2 cup sultanas
Combine the dry ingredients. Rub in butter lightly with fingertips. Just lightly as you want little pieces butter which when they melt will create the layers in your sones. Pour in milk and quickly form into a dough. You may need a little more milk. Just mix until lightly together. Tip onto bench and pat into a rectangle and cut into 6 or 8 squares. Transfer onto a lined baking sheet quite close together. Bake for 10-15 min 200 fan bake.
