Tonightβs salad combines smoked gemfish with air-fried broccoli and panko-crumbed aubergine.

+ Smoked Gemfish, Broccoli, & Panko-Crumbed Aubergine

|Recipe|
- 1/4 large broccoli, florets
- 1/2 aubergine, cubed
- 1 egg, beaten
- Panko crumbs
- 100g smoked gemfish
- Roasted chickpeas
- Chives, finely chopped
|
+ Drizzle the broccoli with oil and air fry at 185C for 3-4 mins. Set aside.
+ Coat the aubergine with the egg and sprinkle with salt and coat with panko crumbs. Drizzle with oil and air fry for 6-8 mins.
+ Toss the broccoli, aubergine, smoked fish, and roasted chickpeas together. Scatter the chives on top and season with salt and pepper.
