🎉Woohoo!🥇🥇🥇🥇
We’re thrilled to share that this morning results were announced for the Outstanding Food Producer Awards - and we’ve been awarded a total of 10 medals, including four Golds!

The Gold winning bars were:
🥇- Kilombero Valley, Tanzania 70%
🥇- Pinalum, Malekula Island, Vanuatu 70%
🥇- Soconusco, Chiapas, Mexico 70%
- and excitingly our newly released
🥇Ea Kar, Đắk Lắk, Vietnam 70%

The Outstanding Food Producer Awards, overseen by Head Judge Lauraine Jacobs, celebrate the inspiring Kiwis who harvest, grow and produce New Zealand’s outstanding food and drink. A dedicated Chocolate category is a new addition to these awards (replacing the NZ Chocolate Awards).

These award wins reflect our constant mission to improve our chocolate craft, our investment in equipment and our investment in the time we’ve dedicated to continually learning, testing and improving.

However there’s no way results like these are possible without working with the finest cacao beans in the world - we couldn’t have done this without the famers, growers, fermenters and suppliers we work with – the fine cacao they produce opens a world of flavour note possibilities to us with each harvest. We have a huge amount of gratitude to them all, and are so pleased to share these results with them.

To celebrate these outstanding results we’ve created a very tasty little four bar gift collection that features the Gold winning bars - which can be found at www.foundrychocolate.co.nz

🍫Introducing our first new single origin of 2024 - Ea Kar, Đắk Lắk, Vietnam 70%.

⛰️Positioned on a plateau between lake and mountain, a skilled farming collective in Ea Kar in Vietnam’s Đắk Lắk province grows cacao alive with evocative layers of intrigue.

🍫In our little chocolate factory just north of Auckland, New Zealand, we accentuate the remarkable personality of these cacao beans by crafting a chocolate brimming with suggestions of silky crème brulée, buttery toffee and delicate woody spices.

This harmonious new chocolate has been in the works for almost two years since we were first introduced to the extraordinary cacao beans grown by the Ea Kar Co-Operative in Vietnams Đắk Lắk highlands.

Eight hessian sacks of cacao arrived to us late last year, and after many months of evaluating test batches of chocolate with different roast profiles, David has created his optimum roast profile to preserve and accentuate the flavours of the origin.
We are proud to say it’s now ready for you to enjoy.

🎨Janelle’s illustration for the packaging artwork is based on the geography of the Ea Kar plateau, where the 51 families of the Ea Kar Agricultural Co-operative are based, the line work of the illustration represents the tasting journey of the bar.

🍫Because we are bean-to-bar , we make all our chocolate ourselves from scratch. And because we use only two ingredients: cacao beans and organic sugar, this makes our chocolate , , , and .

Wow, wow, wow! Now this is how to end an epic year! 🎉🍫
9 awards in the Academy of Chocolate Awards 2023, and unbelievably three of them Golds.

🍫We are utterly blown away by these results. To have this level of acknowledgement for our craft and be recognized amongst the best in the world is absolutely… well, we don’t actually have a word that describes how we’re feeling right now.

🏆These awards are for chocolate makers from across the globe and we are being judged against the best of the best. This year there were over 1,400 products entered from around the world.

This is recognition of the constant work we are doing to hone our craft, our investment in equipment and our investment in the time we’ve dedicated to continually learning, testing and improving. (And we’re not done yet!😉)

🍫We also couldn’t have done this without the famers, growers, fermenters and suppliers we work with – the fine cacao you produce make all of this possible. A huge amount of gratitude and thanks to you all.

🍫We are so proud of each and every one of these bars and drinking chocolates that have been awarded and feel that each one deserves its own recognition of the farmers, fermenters and journey that we have gone through with the origin. So over the next few weeks, we will create individual posts that identify and credit the journey behind of each of these achievements.

🙏Thank you to all those involved

Everything we entered has placed:

🥇Gold: Semuliki Forest, Uganda 70%

🎉It’s here! Our 2023 Whisky bar special release is now live.🎉🍫🥃

We are very proud to be releasing our 2023 limited edition bar – the culmination of months of testing and many months of chocolate making:

🍫Foundry Pinalum, Malekula Island, Vanuatu 70% chocolateinfused with 🥃Thomson Manuka Smoke Single Malt Whisky

🍫This year we’ve introduced Thomson Manuka Smoke Single Malt whisky to our Pinalum, Vanuatu chocolate and the combination is an elegant voyage down the river of delight. Together, this power couple exudes a palate-seducing flood of sensual malt-laden luxury, creamy caramel character and just a playful tickle of spice and smoke.

🍫This very limited-run 70% bean-to-bar chocolate began with cacao from a little pocket of forest in the hills of Malekula Island. David then steeped these superb cacao nibs in a lavish torrent of New Zealand’s own Thomson Manuka Smoke Single Malt Whisky. Then we got to work in our little chocolate factory to create a bar brimming with smouldering sensuality.

It’s just once a year we release our limited special edition whisky infused treats, with each bar and micro-batch numbered by hand, once they’re gone, they’re gone.

🥃Working with Thomson Whisky New Zealand on this bar has once again been a pleasure, they are a wonderful colab partner and we are honoured they trusted us with their amazing whisky again this year.

We hope you love this bar as much as we do, the way Pinalum’s tasting notes meld together with all the smoky character of the whisky is something to behold.

You can get yours here: https://foundrychocolate.co.nz/collections/special-releases

Our thanks to:
Gaston Chocolat Olivier and the Pinalum Village team for all of the work that went into the cacao beans.
for his pack wordsmithing
for once again sorting our exquisite printing.

So this just happened!

Silverdale you’ll have new neighbours soon.

Five years to the month since we launched, our little foundry is growing a little bigger, which makes us very excited for MANY reasons.

One of which is definitely being able to finally use the equipment that we have researched, saved for, bought and shipped and have had to have in storage. With that equipment comes the opportunity to refine our craft further and create even better single origin chocolate. We will also be able to store all of our cacao beans on site for the first time in years. We’ll have the ability to create more single origin chocolate bars and drinking chocolate meaning Foundry in a retailer near you, as well as having the space (both production and mental) for creating new special projects and collabs.

Eventually we will create the very much requested tours and tastings, Janelle even has plans for a cellar door! Just give us a bit of time to get settled in first though eh.

We plan on no disruption to our online store while we move, so we will continue to dispatch your orders on overnight courier.

Thank you to everyone who’s supported us over the last five years, and encouraged us to keep on keeping on in our own way, what an adventure it’s been so far. This move has been a long time in the making and we're very excited, and very ready to start writing the next chapter in our chocolate story.

Foundry Ucayali River Peru x Thomson South Island Peat Single Malt has officially released.🎉

🍫We are very proud to finally be releasing our 2022 limited edition bar – the culmination of many months of testing and many months of chocolate making – Peru x Thomson South Island Peat.
Working with Thomson Whisky New Zealand on this bar had been a pleasure, they are an amazing colab partner and we are honoured they trusted us with their spirits again this year.

🍫We began with cacao beans sourced from family-owned farms alongside the Ucayali River in Peru. David then drenched these exquisite nibs in a heady ocean of Thomson South Island Peat Whisky, then set to work in our little chocolate factory. The result is a sensorial sensation – together this dynamic duo erupt in a rock opera of boisterous berry notes and melodious smoke, building to a spectacular crescendo of exuberant spices.

🍫It’s only once a year we release our special edition whisky infused delights, this is a strictly limited edition available from our website and a handful of retailers, once they’re gone they’re gone.

Just once a year we throw caution to the wind to create something wildly different in our little foundry in Mahurangi, New Zealand.

For 11 months of the year we are firmly committed to the purity of making single origin craft chocolate using only two ingredients, but David loves to tinker, and so for no other reason than a love of flavour and creating… a sensorial sensation is releasing soon.
