What’s cooking Chef David?

Well house made granola is made, the hollandaise is done and the doughnuts are rolled ready and hot for cinnamon and sugar, that’s just for starters!

We’ve got such an exciting lunch and dinner menu prepared for today and this weekend too.

Two Hawke's Bay wineries, who among others have suffered the damaging effects of Cyclone Gabrielle, have taken up the opportunity to showcase their wines at a pop-up cellar door at Hastings NZ isite.
Open for the month of April, Radburnd Cellars and Hancock and Sons Wines are bringing their wines to the people.
If you're going past stop in, say hi, sample the wares and support your local winemakers. (The cellar door will be open Wednesday -Saturday 10am-4pm).

John is one of the characters of the industry and a dear friend, he has just completed his 50th vintage … 1979 he arrived in NZ to start with Delegat’s then to become chief Winemaker at Morton Estate, 15 years on he came to Hawkes Bay to set up Trinity Hill wines.. the rest is history …. Now with son William they have .. a legend

Beautiful weather in Wellington over the weekend ☀ Great to see a good turnout for Winetopia. To catch up with a surprising number of people who were already familiar with our brand was a real pleasure. The wines were showing well and we introduced ourselves to a good number of new customers.

Rosé was the big winner with the Cabernet Franc red coming in not far behind which was gratifying. People really enjoyed the dry, lighter Lillie’s Rosé. All in all, an excellent few days. Good also to catch up with trade. Some new listings coming up to give us some more coverage and outlets in Wellington which is great 🍷

Today we're celebrating a very important event on our calendar... Chardonnay Day! A variety we love at Hancock and Sons.

"My Chardonnay light bulb moment was tasting the 1979 Louis Latour Corton Charlemagne in 1981, my first great Burgundy. I wondered why it was so different to what we were doing. I was lucky enough to visit Louis Latour during their 1981 harvest. They were pressing Chardonnay direct to barrel, something we never did. This changed my thinking as to how Chardonnay could be made. Definitely not the same way we made Muller Thurgau and other aromatic wines where we clarified juice before adding cultured yeast.

This culminated in the Morton Estate Black Label 1984, barrel fermented in new oak, which revolutionised the way New Zealand Chardonnay was made" - John Hancock, Winemaker

"What a delicious, creamy, textural, fresh, judiciously-oaked and beautifully-crafted wine this is. It represents the essence of Chardonnay, extremely full-bodied and concentrated, yet remarkably well-balanced inspite of its "bigness" ...and with "John Hancock" written all over it! 😁

The Chardonnay is loving this Hawke's Bay heat ☀️ It's bunch closure time out in the vineyard, just prior to veraisson where we see a sugar level increase and change in berry colour as the grapes start ripening closer to harvest.
