My name is Fuchsia (named after the colour, the flower and a pesky princess in a book my Mum was reading when she was pregnant) 🌸
I went vegan when I was 15 after reading about the treatment of animals in the food industry 🐷
I stayed vegan because I saw the incredible impact it had on my health and the health of others. This sparked an interest and I started to learn more and more about nutrition in my spare time 📚🍎
Hungry (pardon the pun 😉) for more, I went on to study a Bachelors in Food Science & Nutrition and then a Masters in Dietetics at the University of Auckland 👩🎓…
Here I was immersed in the world of clinical nutrition to build the skills I hold today in helping people unlock better health through nutrition 🙌
Fuelled with a passion for plant based nutrition (not only for personal health but for planetary health too), I created Feed Nutrition as an outlet to share my knowledge with others!

🔥 AIR FRYER FALAFELS 🔥
I'm a big fan of falafels, they're delicious on platters, in a pita or on rice with plenty of hummus and salad 🥗
Falafels are packed with goodness, usually being a mixture of chickpeas, spices and onions, but what I've found is that the store bought falafels can have lots of oil and fillers in them.
But this doesn't need to be the case - you can make your own at home in ~20 mins!
With the help of a handy airfryer (or oven), you can have homemade falafels in three steps! All you need to do is...
✅ Pop all the ingredients in a food processor and pulse until smooth.
✅ Roll into balls.
✅ Cook for 15 minutes in the airfryer.
These falafels are:
- Gluten Free
- Oil Free
- Vegan
- High protein
- High calcium
- Lower calorie
- Absolutely delicious
I like serving mine with turmeric rice, tabbouleh and hummus, yum! 😍 I hope you enjoy them as much as I do!

Can't decide on brunch or burgers? In that awkward in between time when it's too early for a full blown burger but too late for sweet pancakes? 🤷♀️
Well, this is how I was feeling over the long weekend, so I decided that it was high time that savoury pancakes got a serious upgrade. 🙌
As you may know, I'm a big fan of savoury breakfasts and new food concepts. So it will come as no surprise that this meal ticked all my boxes. ✔️
This recipe features pickle pancakes as your "bun", roasted peppers, tomato and toasty smoked paprika vegan chicken as the "burger". 🍔

WHAT SHOULD I EAT? ✨
Without special attention, plant based diets can be low in protein and calcium. Tofu scramble will start your day with a boost of both ✨
This is one of my favourite simple recipes to start the day. It takes about 10 mins to make.
RECIPE (serves 1-2 depending on how hungry you are!)
✨ Crumble 1 block of tofu in a bowl
✨ Fry tofu with a dash of oil, seasoning with salt, ~2tsp turmeric and a generous sprinkle of ground cumin.
✨ When almost cooked through, add thinly sliced silver beet to wilt.
✨ Serve on grainy bread and top with seeds. I chose pumpkin and sesame.
THIS RECIPE IS
⭐️ High in protein with plenty of tofu.
⭐️ High in calcium (if you choose tofu that states ‘calcium’ on the ingredients, some kiwi brands are made with magnesium instead).
⭐️ Provides healthy fats and trace minerals from seeds.
