Carrot Cake Recipe - OMG😱 DON'T LOSE THIS😋
INGREDIENTS
Cake:
4 eggs
1 ¼ cups vegetable oil
2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
½ teaspoon salt
2 teaspoons ground cinnamon
3 cups grated carrots
1 cup chopped pecans
Frosting:
½ cup butter, softened
8 ounces cream cheese, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans
INSTRUCTIONS
Step 1
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
Step 2
In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.
Step 3
Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
Step 4
To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake.
Creamy Garlic Shrimp
* Ingredients
° 1 ½ lbs. Large peeled and flowered shrimp with tails
° 2 tbsp. olive oil
° 3 tablespoons. Unsalted butter
° 3 tsp. Minced garlic
° C. white cooking wine
° 1 C. Heavy whipping cream
° ½ c. Grated parmesan cheese
° Salt and pepper to taste
* Instructions :
Heat the oil in a frying pan over medium-high heat on the stove.
Add the shrimp to the pan and season with salt and pepper to taste. Fry on both sides until burnt and cooked through. Removing From heat also set apart .
Minimzie heat to medium, & adding butter also garlic to skillet. Frying until butter melts.
Stirring white cooking wine in skillet & simmer to the liquid is reduced by half.
Whisk heavy whipping cream in the skillet and simmer until the sauce thickens.
Mix the Parmesan cheese with the sauce and add the shrimp to the skillet, stirring well.

Baked Salmon In Foil -Don't Lose This
INGREDIENTS
2 lemons, thinly sliced
1 large salmon fillet (about 3 lb.)
Kosher salt
Freshly ground black pepper
6 tbsp. butter, melted
2 tbsp. honey
3 cloves garlic, minced
1 tsp. chopped thyme leaves
1 tsp. dried oregano
Chopped fresh parsley, for garnish
DIRECTIONS
Preheat oven to 350°. Line a large rimmed baking sheet with foil and grease with cooking spray. To the center of the foil, lay lemon slices in an even layer.
Season both sides of the salmon with salt and pepper and place on top of lemon slices.
In a small bowl, whisk together butter, honey, garlic, thyme, and oregano. Pour over salmon then fold up foil around the salmon. Bake until the salmon is cooked through, about 25 minutes. Switch the oven to broil, and broil for 2 minutes, or until the butter mixture has thickened.
Garnish with parsley before serving.

Custard Muffins
Ingredients
2 & 1/2 cups flour (cake or plain)
1/3 cup custard powder
1 & 1/4 cups white sugar
1/2 cup vegetable oil
1 cup milk
2 eggs
2 tsp vanilla essence
2 tsp baking powder
1/4 tsp salt
Instructions
1. In a large bowl add flour , custard powder, baking powder and salt then whisk well .
2. In another large bowl add vegetable oil, sugar . Then add vanilla and mix in one egg at a time .
3. Add milk then mix . Sift in the dry ingredients (flour mixture) . Mix just to combine the wet and dry ingredients together.
4. Scoop out the batter (mixture) into a prepared muffin tray .
5. Bake in a preheated oven at 180 Degrees Celsius for 25 minutes or until well baked .
Red Velvet
Red Velvet Cake
Ingredients
1 & 3/4 cups cake flour
1 cup white sugar
1/2 cup vegetable oil
3/4 cup buttermilk
2 eggs
1 & 1/2 Tbsp cocoa powder
1 Tbsp gel red food colouring
1 tsp bicarbonate of soda
2 tsp vanilla essence
1 tsp white vinegar
1/2 tsp salt
Instructions
1. In a large bowl mix sugar and oil . Then add vanilla and eggs . Mix well.
2. Add buttermilk . Mix , then add red food colouring. Mix .
Sift in flour , bicarbonate of soda, cocoa powder and salt .Mix until all ingredients are well combined.
3. Add white vinegar then gently mix .
Line a square cake pan with parchment paper and grease the sides with butter or oil .Pour the batter (mixture).
I used 8 inch square baking pan.
4. Bake in a preheated oven at 160 Degrees Celsius for 50 minutes or until well baked( depending on your oven).
5. Let the cake cool off completely before you frost it.
6. After cooling off trim the top part of the cake and cut off the edges as well .Cut it into half then cut off those halves into two so that you can have 4 layers.
7. Frost the cake with the whipped cream. Then sprinkle some crumbles on top for the final look .( Make the crumbs using the top part of the cake you cut off or the edges you cut off ).
Note❗️* The making of red velvet cake is scientific . One mistake everything can go wrong . DO NOT substitute or leave out any ingredient. Use the ones listed above . Yes , you do need both buttermilk and vinegar when making red velvet cake .
FOR THE CREAM
1/2 cup cold heavy or whipping cream
3 Tbsp icing sugar
1 tsp vanilla essence
* Add all 3 ingredients in a large bowl. Beat until you get a thick consistency.
Note : Make sure the heavy or whipping cream is extremely cold .
Lemon pound loaf
Ingredients
2 cups flour
3/4 cup white sugar
3/4 cup butter (softened)
1/4 cup plain yoghurt
3/4 cup full cream milk
3 eggs
2 Tbsp lemon zest
1/4 cup freshly squeezed lemon juice
3 tsp baking powder
1 tsp vanilla
Instructions
Preheat the oven to 180 Degrees Celsius.
1. In a large bowl cream the sugar and butter until light and fluffy.
2. Add vanilla , lemon zest then mix in the eggs one at a time .
3. Add milk , yoghurt, lemon juice then mix . Sift in flour and baking powder. Mix gently.
4. Transfer the batter(mixture )in a lined loaf tin . Bake for 25 -30 minutes in a preheated oven.
Bran muffins
Ingredients
1 cup flour
3/4 cup wheat bran/bran flakes (1/4 cup x3)
1/4 cup butter or vegetable oil
1/2 cup brown sugar
1/2 cup oats
3/4 cup buttermilk
1 egg
1/2 cup boiling water
1 tsp cinnamon powder
1 tsp bicarbonate of soda
1/2 tsp baking powder
1 tsp vanilla
Instructions
1.Preheat the oven to 180 Degrees Celsius. Then add hot water to the bran and mix. Put it aside.
2. In a large bowl beat the butter or oil with sugar until light. Then add the egg and vanilla and mix .
3. Add the soaked bran , oats and buttermilk then gently mix .
4. Sift in flour, baking powder, bicarbonate of soda ,cinnamon powder. Mix gently.
5. Use a spoon or an ice cream scoop to scoop the batter (mixture) into a lined muffin tray . Sprinkle some oats on top .
6. Bake in a preheated oven for 15 minutes or until well baked .
❗️HOMEMADE BUTTERMILK: Add 2 tablespoons of white vinegar or freshly squeezed lemon juice to 1 cup milk. Let it sit for 5 minutes before you use it .

Lemon scones
Ingredients
3 cups Plain flour/ self raising flour
5 tbsp sugar
3/4 cup cold unsalted butter
3/4 cup +1 Tbsp cold buttermilk/amasi
1 egg
3 tbsp lemon zest
1 Tablespoon baking powder
1 tsp vanilla
1/4 tsp salt
If you are using self raising flour just add 1 tsp baking powder.
Instructions
Preheat the oven to 190 Degrees Celsius.
1.In a large bowl sift in flour then whisking, baking powder , sugar and salt .
2.Add the lemon zest and butter , then rub in the butter using your finger tips until you get a crumbly texture ( sand like ) . The butter should be cut into small cubes/grated.
3.In a small bowl whisk in the buttermilk ,egg and vanilla together. Then pour to the dry ingredients mixture.
4.Mix the wet and dry ingredients together. Don’t over mix.
5. Slightly flour your work surface . Transfer the dough to the work surface and fold it 3 times as you flatten it .(This is to create flaky layers).
6.Shape the dough into a round shape . Cut it out into 8 triangular pieces then slightly brush each piece with an egg white.
7.Bake for 22-25 minutes or until lightly golden brown on top .
Glaze/ icing
1 cup icing sugar + 1 1/2 Tbsp freshly squeezed lemon juice.
Mix the icing sugar and lemon juice until you get a thick consistency. Add more icing sugar if it’s watery .

Custard tea cakes
Ingredients
2 cups plain/ self raising flour
1/2 cup butter (softened ) 113g
1/3 cup white sugar
1 egg
1/4 cup milk
1/3 cup custard powder
3 tsp baking powder
1 tsp vanilla
1/4 tsp salt
1 egg yolk (for brushing)
Note ❗️: If you are using self raising flour don’t add baking powder.
Instructions
Preheat the oven to 180 Degrees Celsius.
1. In a large bowl cream the butter and sugar until light.
2. Add the egg and vanilla, mix until well combined. Then add milk .
3. Sift in flour , baking powder , salt and custard powder . Mix until well combined.
4 . Transfer the dough into a slightly floured surface. Roll it into a log (stick like shape).
Cut it into small pieces.
If the dough is sticky sprinkle some flour.
5. Roll the dough pieces into balls . Place in a lined parchment paper . Use your palm to slightly flatten them out .
6. Use a knife to make a cross on each dough piece . Brush each dough with an egg yolk.
7.Bake for 20- 22 minutes or until golden brown on top.
High tea cakes
Ingredients
2 cups plain flour
1/2 cup butter (soft) 113g
3/4 cup white sugar 150g
2 tsp baking powder
1 egg
3 Tbsp milk
1 tsp cinnamon powder
1 tsp vanilla
1/4 tsp salt
1 egg yolk (for brushing)
Instructions
Preheat the oven to 180 Degrees Celsius.
1. In a large bowl cream the butter ,sugar and salt until light.
2. Add the egg and vanilla, mix until well combined.Then add milk .
3. Sift in flour , baking powder and cinnamon powder . Mix until the wet and dry ingredients are well combined. Use your hands for this process.
4 . Transfer the dough into a slightly floured surface. Roll it into a log (stick like shape).
Cut it into small equal pieces.
5. Roll the dough pieces into balls . Place the dough pieces in a lined parchment paper.
6. Add 2 tsp water to the egg yolk and mix . Brush each dough piece with the egg yolk mixture. Sprinkle some sugar (optional).
7. Bake in a preheated oven for 20-25 minutes or until golden brown on top.
Chocolate sugar cookies
1 & 3/4 cups flour
3/4 cup butter (softened)
1 cup white sugar
1 egg
1/2 cup cocoa powder
2 Tbsp cornflour/corn starch
3 tsp vanilla
1/2 tsp baking powder
1 tsp ground coffee /powder
Instructions
1.In a bowl add flour, cornflour,baking powder. Whisk and set aside.
2.In another bowl beat the butter and sugar until light and fluffy.
3.Add the egg and vanilla. Mix well. Then sift in cocoa powder and coffee powder .Mix until well combined.
4. Add the flour mixture . Mix until the wet and dry ingredients are well combined.
5. Roll out the dough on a parchment paper. Then take another parchment paper and cover .
6. Place the dough in the refrigerator for at least 2 hours . Or alternatively freeze it for an hour.
If you bake without chilling the dough the cookies are gonna spread and be shapeless.
7. After the dough has chilled use a cookie cutter to cut out the dough. The dough has to be very cold through this process.
Bake in a preheated oven at 175 Degrees Celsius for 10 minutes.
You can sandwich the cookies with royal icing/ melted chocolate or eat them just like that .
Peanut butter loaf cake
Ingredients
1/2 cup peanut butter
2 cups flour
1/4 cup vegetable oil
1 cup brown sugar
1/2 cup white sugar
1/2 cup buttermilk
2 eggs
1 cup water
1 tsp bicarbonate of soda
1/4 tsp salt
1 tsp vanilla
Instructions
Preheat the oven to 180 Degrees Celsius.
1. In a large bowl mix together peanut butter, vegetable oil and water until pale and creamy .
2 . Add the white and brown sugar, eggs and vanilla then mix well .
3. Sift in flour , bicarbonate of soda and salt . Then add buttermilk. Mix gently until the wet and dry ingredients are well combined.
4. Pour the batter ( mixture) in a baking pan/ loaf pan.
Bake in a preheated oven for 40-45 minutes.
Optional: Frosting
When the loaf has completely cooled off you can frost it .
1/2 cup peanut butter
1/2 cup icing sugar
3 Tbsp milk .
Mix all the ingredients well then frost the loaf . Sprinkle some grated chocolate if you like 😉.
Coconut scones
Ingredients
3 cups Plain flour
4 Tbsp white sugar
3/4 cup cold grated butter (170g)
1/3 cup desiccated coconut/coconut floss
3/4 cup + 2 Tbsp buttermilk
1 egg and 1 egg yolk
4 tsp baking powder
1 tsp vanilla
1/4 tsp salt
Side note :
3/4 cups means 1/4 cup x 3 . Not 3 to 4 cups .
Instructions
1. Preheat the oven to 190 Degrees Celsius.
2. In a large bowl sift in flour , baking powder, sugar and salt .
3.Add the cold butter and rub in with your finger tips until you get a sand like texture . Then add the coconut and mix .
4.Add the egg , egg yolk,vanilla and cold buttermilk then gently mix the wet and dry ingredients together.
5. Transfer the dough on a slightly floured surface. Gently bring it together using your hands and flatten it out.
6. Use a round cookie cutter to cut out the dough.
Slightly brush each dough piece with an egg white .
Bake for 20-22 minutes or until lightly golden brown on top .
