this dish (except i get the tuna fettuccine instead of the pesto pasta, but it’s sold out today) was my go-to when i first moved to manila in 2004.

It has a high smoke point which makes it perfect for a lot of dishes, especially for high-heat cooking like fried dishes. It also has a neutral profile so I can be sure it does not affect the food’s natural taste.

I don’t dream of going to Taylor Swift concerts or climbing Everest, I dream of moments like these. My first time dining at a 3-Michelin Star Restaurant, and of course I’m taking you with me—

Every dish showed exceptional talent—it was somewhat classical yet still creative, refined, beautifully plated with luxurious ingredients. Each bite was a journey—a mind-blowing, tear-provoking journey.

It’s hard to play favorites here, but the standouts for me were the Tossed Cucumber with Jelly Fish and Lily Buds, Chilled Drunken Mantis Shrimp in Spices Aged "Hua Diao" Wine, then the Hot and Sour Soup with Hokkaido Kegani Crabmeat, and of course the Jade Dragon Prime-Cut Barbecue Iberico Pork Collar, Crispy Suckling Pig with Caviar and Signature Deep-fried Gillardeau Oyster. And The Almond Creme Brûlée with Bird’s Nest and Honey to end this lifetime memorable dining moment.

The quality of service simply sets the bar. May just be the best service I’ve gotten EVER. The servers were professional yet still warm and friendly. The attention to detail, the personalized service, the going-above-and-beyond for us, it was SPECTACULAR.

I wanted to do a standing ovation after my dining experience 😆 and they’d truly deserve it!!!

Of course, you have to get their Tsukemen— the noodles were chewy and springy, perfect to dip into the flavorful broth. And their spicy tuna, easily became one of my favorites in the city. 💥
