Avocado Cucumber Salad Recipe
Ingredients:
2 ripe avocados, peeled, pitted, and diced
1 large cucumber, peeled and diced
1 cup cherry tomatoes, halved
¼ cup red onion, finely chopped
¼ cup fresh cilantro, chopped
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon honey or agave syrup (optional)
Salt and black pepper to taste
Instructions:
Prepare the Ingredients:

Dice the avocados and cucumber into bite-sized pieces.
Halve the cherry tomatoes and finely chop the red onion.
Chop the fresh cilantro.
Combine the Vegetables:

In a large bowl, gently toss the diced avocados, cucumber, cherry tomatoes, and red onion.
Make the Dressing:

In a small bowl, whisk together olive oil, lemon juice, and honey or agave syrup if using.
Season with salt and black pepper to taste.
Dress the Salad:

Pour the dressing over the vegetable mixture.
Toss gently to coat all the ingredients evenly.
Add Fresh Herbs:

Sprinkle chopped cilantro over the salad and give it a final toss.
Serve:

Serve immediately or chill in the refrigerator for 30 minutes before serving to let the flavors meld.
