How we prep after harvest.💫
💡Those we wash, go straight into the fridge. Those we do not wash, we store in a cool, dry area for release. Not washing allows the "bloom" to stay, thus protecting the eggs by not allowing bacteria to enter them. Aside from this, the bloom retains the egg's moisture. Despite its hardened shell, an egg is porous, thus prone to bacterial invasion.
