Being on high animal fat diet can make me think much less often (way way way much less) about food as my body and brain stay nourished for longer periods. I was in such a rush this morning that I couldn't squeeze in a meal time before hitting the road. Fortunately, there's "lard-rendering" activity in the kitchen and so we have a good amount of pork cracklings just waiting to be devoured. I put a bunch in a container with some vinegar and that solved the 2-fold problem: hunger and craving. It's my fave to-go food. Pork cracklings contain a heap of cholesterol from its saturated fat and vitamin B12, both of which I am in constant need of; they're also loaded with sodium, potassium, iron, calcium and magnesium - nutrients that a wife, mother and business person like I am cannot be efficient without.
Slow-cooking is now my best tool in extracting as much nutrients as possible from nutrient-dense animal parts like knuckles. Salmon for omega 3, cholesterol, potassium, sodium, vitamin B6, cobalamin, magnesium, vitamins C and A. Vinegar-soaked black rice for antioxidants, anthocyanins, fiber, vitamin E and B vitamins.

Having experienced severe depression and anxieties for 3 years made me want to make sure that I’m doing everything I can to make sure I don’t slide back into that horrible, dark hole again. One big step away from that pit is strengthening the bio diversity of my gut flora, the seat of my mental health. And there’s no cheaper and more effective way to give our guts a blast of good bacteria than by consuming our own homemade fermented vegetables. And so... I, and my family, have officially joined the bandwagon of fermentation! My grateful thanks to Ms. Sally Fallon-Morell and the Wise Traditions Podcast episode 44 (Principle #5), to which I listened 3x 😅, and the Homesteading Family Youtube channel fermenting video https://youtu.be/4AR2PAFTeBU.

Every time I go on a long country drive, I make sure I download a few of my favorite podcast shows to listen to, and that I have right beside me my favorite healthy snack. Today, It’s pork skin cracklings dipped in spiced vinegar and an episode of Wise Traditions Podcast titled “Bucking the System”, where Ms. Sally Fallon-Morell sheds better light on the controversial topics on aluminum, fluoride and cannabis.

I have been down with a bad viral flu since Tuesday. I haven’t had this kind of flu since... I can’t remember the last time. Definitely not in the last couple of years. This time though, no body aches or fever. Just the pesky runny nose. Wednesday afternoon, the first wave of cravings came knocking. It was cravings for “balut”. A fertilized egg that’s cooked and eaten while hot (or warm) to enjoy the soothing soup before the egg is eaten. The cravings hit me while I was driving home, just in time as I passed by the “balut” vendor right at our village gate. Next time I will definitely take a video of me buying and eating.
I enjoyed 2 pieces of balot and was satisfied and could feel (or imagine 😊) the healing cholesterol start to do their job with whatever inflammation I had. If you’re not familiar with “balut”, you can have the same amount of cholesterol from twice the number of regular eggs.
During the tail end of my depression, I first read on the truths about cholesterol at the website. I will always be grateful for and their dedicated team of professionals for making available those crucial and factual information on cholesterol and saturated fats. It served as my guiding light to make sure I continue to heal from depression.

I recently gifted my mother-in-law with a tub of home-cooked liver pâté (with hearts and gizzards). Since I wasn’t expecting her to be jumping up and down over the taste (she’s used to canned liver spreads), I was delighted when she texted the next day to tell us how much she was enjoying her “new liver spread” on her piece of piece of toast. Being 77 years old, her brain can benefit a lot from the pâté’s abundant quantity of vitamin B12.
Liver is also loaded with vitamin A, and the minerals iron and zinc which are vital for mental health.
Nowadays, each time I crave for a piece of chicken or beef liver, it always coincide with my having been under a significant amount of stress. My experience with severe depression and how I healed from it has made me sensitive to these intuitive cravings that tell me what my body needs to cope with stress or maybe heal from an inflammation that resulted from being exposed to severe stress.

For my family, I have been using beef tallow and pork lard as our cooking fats/oils since 2013. It has been one of the most instrumental healing agents that pulled me out of severe depression by helping heal my damaged gut. I stared at her a long while. I couldn’t believe what I just heard. Wasn’t I suffering from a mental condition? Wasn’t Jet suffering from ulcers? This God-given, nature-endowed sensitivity is what we need to re-awaken in us. “
