The challenges to completing this task almost got the better of me. Today’s weather reminded me how drastic humidity and temperature changes affect the way our mediums behave. I used white chocolate ganache for this one. Usually very easy to handle. Stable. Dry. Not today. Huhu. Not to mention that the original foliage didn’t come through because, again, of the inclement weather.

But, whatever we are faced with, we power through because a wedding must go on.

I still love doing semi-naked cakes. I used to assemble or stack naked cakes onsite because they are too delicate to transport. Years of doing this, I have found ways to make them sturdy enough to be transported stacked. Yay!
