Mahilig ka ba sa proben? Alam mo ba kung saan nanggaling ang pagkain na ito?
Proben or proven is actually short for “proventriculus”, the true stomach of chicken located between the crop and the gizzard or “baticolon”. It is marinated in some form of salt and vinegar (along with other spices), and then coated in wet batter, and then tossed in dry flour or corn starch just before frying. This proben street food is deep-fried until the exterior becomes golden brown and crispy. They are served in plastic bags, or skewered and fried on bamboo sticks. Ano nga ba ang kahulugan ng “charcuterie”?
Charcuterie (shahr-koo-tuh-ree) is an ancient culinary practice, which dates back about 6000 years to ancient Rome, that involves preserving meats such as ham, bacon and sausage through methods like salting, smoking and curing before the advent of refrigeration. Today, the term is mostly used for an array of meats that are paired with a variety of accompaniments, such as fruit, cheese, crackers, toasts, sauces, nuts, and so on. These combinations are then beautifully arranged on charcuterie boards, and are perfect for dining with a group who has a range of tastes. To make the most of these appetizers in a fancy platter, it is typically paired with an alcoholic drink, usually wine.
