Scallops are delicately mild in taste and oozes with health benefits such as vitamin B12 which is a very important nutrient for cardiovascular health. Couscous tabbouleh is an Israeli dish that is made up of couscous, tomato, cucumber, bell pepper, dried raisins, and a splash of lemon juice and fresh mint. Couscous is a great alternative for white rice which contains significant amounts of carbs and sugar. The other ingredients that make up tabbouleh are light and healthy but heavy on flavors that complement each other perfectly and elevates this dish as a whole. Couscous tabbouleh can be enjoyed on its own or paired with other meatless or meat based dishes.

This Moroccan Beetroot Salad is perfect whether you’re vegetarian, pescatarian, or flexitarian. Beetroot is loaded with impressive health benefits and is a great source of nutrients such as fiber, folate, and ascorbic acid.
