Makes 12 Buns

450g baker’s flour
110ml full cream milk
30g fresh yeast (15g dry active instant yeast)
50g caster sugar
25g brown sugar
2 eggs
2 egg yolks
2tsp salt
140g potato mash (mix together 125ml boiling water with 15g instant mash power and let sit in the fridge for 15 minutes)
3tsp cinnamon powder
1/2tsp mixed spice
180g mixed fruit (ideally soaked in water or brandy overnight, but optional)
90g butter, softened

For the cross:
150g plain flour
200ml water

For the glaze:
200g caster sugar
200ml water

Combine all the ingredients minus the butter and mixed fruit in the bowl of an electric mixer fitted with a dough hook and mix for 6-7 minutes or until smooth, add the butter and fruit and mix for another 2 minutes or until glossy. Place in a bowl, cover with a tea towel and allow to rest for an hour or until doubled in size. 

Line a baking tray.

Lightly flour a clean, dry surface. Divide the dough into 12 even size balls. Gently roll each piece of dough to create a ball. Place the rolls on a lined baking tray with around 2 centimetres between each roll so they bake into each other. Cover with a clean tea towel, and allow to prove in a warm area for 45 minutes - 1 hour, or until doubled in size. 

Preheat the oven to 180℃

To make the cross:
Combine flour and water in a bowl of an electric mixer with a paddle attachment and mix for 2 minutes or until smooth

Once the buns have proved, use a pastry brush to brush them generously with the whisked egg, then bake for 20-25 minutes or until the buns are golden brown. 

Whilst the buns are baking in a small saucepan combine the water and sugar for the glaze and bring to a boil - cook for 1 minute over a medium low heat.

Remove the buns from the oven and brush over your sugar glaze. Enjoy 08/06/2023
