The Lambassador program is a global project of Victorian Government and Meat and Livestock Australia (MLA) that identifies influential food professionals who are passionate about cooking with Australian lamb. Chef Robby Goco is first Lambassador for the Philippines. The Lambassador Menu showcases his dedication to crafting delicious lamb dishes using Australian lamb.
8 hour Roast Lamb
Chef Robby’s signature slow-roasted lamb shoulder with Greek fries, lemon, and oregano.
Low and slow Lamb Stew
Greek stifado-style with grape molasses (petimezi), carrots, whole shallots. Fresh parsley with sumac onions Served with choice of side.

In an exciting development bridging culinary cultures between Australia, in collaboration with the Victorian Government, and the Philippines, Meat and Livestock Australia (MLA) is bringing a new group of global ‘Lambassadors’ to showcase Australian lamb.
The Lambassador program is a global project identifying influential food professionals passionate about cooking with Australian lamb. Last Oct 2023 Chef Robby was appointed the first Lambassador for the Philippines.
As part of the Program, Chef Robby launched last April 17, 2024 a new Lambassador Feast that will be served in all SOUV! by Cyma and Cyma branches.
