When I feel tired and I need more energy than I have I like to make myself some basic but nourishing and warming food.

This is some rice conjee and Green Pesto Seasoned Pumpkin.

Rice Conjee is the Chinese term for what we would call a rice porridge. For this you put one cup rice and 4 cups water in a pot and boil it for an hour (depending on the type of rice you use you might need more water to prevent it from burning). To make the rice even more digestible you can rinse it before cooking under cold water till the rinse water comes out clear.
I like to season with salt, pepper and h**p oil (you can use oliveoil, avocadooil, ghee...)

You can top it with any vegetables, beans, lentils or even meat, but because it is pumpkin season and I just love the sweet taste of an Hokkaido, it was an easy choice today.

I put the cubes of pumpkin in a pan with a drop of olive oil, a few slices of fresh tumeric, some water to cover the base of the pan and cooked them until soft. To add some flavour I added 2 tsp of my green vegan pesto.

It was easy to make and felt just sooooo good to eat something that is soft, kind and feels like a big embrace. Just what I needed.
