I had to find a vegan version of bechamel sauce as it is my all-time favorite sauce. Here it is:

- 1 liter of almond milk ( no added sugars, but can be a blend with other types of ingredients like soy, oat, or rice. As long as there is no sweet flavor to the milk)
- 1 onion, if not organic, peeled and cut in 4 (if organic, keep the peel)
- 3 garlic cloves, if not organic, peeled and each one cut in half (if organic, keep the peel)
- fresh ground black pepper
salt
- one or two bay leaves
fresh nutmeg
- 1/2 cup of vegan butter or a neutral-flavored vegetable oil
- a few tbsps of white flour
- nutritional yeast (optional)
It's all about marinating your milk. So put all the milk in a sauce pan on a low fire. Add the onion, garlic, a good amount of fresh black pepper, start with a tsp of salt (you can always add more later), the bay leaves, and some freshly grated nutmeg. Let it slowly get warm, like 20 minutes on the fire. It doesn't necessarily need to get to a boiling point. Once your milk starts to smell nice and savory, you can sift the onion, garlic, and bay leaves out and start making your bechamel sauce. For those who don't know how to do that, here is the classic recipe:

In a sauce pan, melt your butter or let the oil get hot. Turn your fire low. Add flour until you get a crumbly dough. Stir until these crumbles start to smell like cookies. Now it's time to bit by bit add your milk. Stir consistently, you will notice in the beginning it gets ferm pretty fast. Add more milk and give the mixture the chance to become homogenous before adding more milk. You keep adding milk until you reach the consistency of a nice thick sauce. Taste if it needs more salt and add nutritional yeast for extra flavor.

Taken in consideration that it's a very small fruit, itโs a good source of fiber, vitamin C, and vitamin A. A single-fruit serving of passion fruit provides around 2 grams of fiber and is quite rich in antioxidants.
Add it in your breakfast cereals/porridge/granola, or pimp your salad with this sweet and sour delight. I like to add it as a topping in my desserts: could be a brownie, some baked apples with coconut cream, or your favourite ice cream :)

Many fruits and vegetables are offered in supermarkets, which makes it hard to distinguish which ones are seasonal. When I am confused, I usually search for the country where they are produced. This information can be found in different spots: on the price-per-kilo-label, on the packaging itself, or when sold in bulk; search on the box. When it's produced in your country, there is a high probability it's in season as well. Also; you can use a calendar related to your country, which is easy to find on the internet.

You want to know how to make sushi with local products? Just as tasty as the real deal! Besides de Nori (the sushi wrapping) it was easy to find all the ingredients from local produce. Portuguese based, I am lucky to live in a country that produces rice, and the perfect type for sushi is โCarolinoโ. For other European countries, you can also use the Italian Arborio rice, which is known as a โrisottoโ rice. Make the recipe below to create your own sustainable delicious sushi.
For the rice:
โข 1.5 cups (300 grams) short grain rice ๐
โข 3 cups of water๐ง
โข 3 tbsp organic apple vinegar ๐
โข 2 tablespoons sugar or any plant syrup ๐ฑ
โข 1 teaspoon salt๐ง
Boil water and add a bit of salt. Add rice, put the lid half on, when water starts to boil again, turn fire to a low, and simmer for about 10minutes. Your rice is finished when all the water has disappeared. While the rice is cooking, you can prepare the seasoning. In a separate bowl, dissolve the sugar and salt in your vinegar, thats it! Add the seasoning to the cooked rice. Make sure you mix well so all the rice is covered. You may adjust the seasoning to make it sweeter or saltier based on your taste.
For the sushi
โข Your prepped sushi rice ๐
โข 5 nori sheets
โข Half a cucumber ๐ฅ, cut into thin strips
โข 2 big carrots ๐ฅ, also cut into thin strips
โข Choose a local fruit, depending on the country. Could be an avocado๐ฅ , a mango๐ฅญ , peach๐ , nectarine ... (fleshy fruits work best) cut into thin strips
If you have a bamboo mat you want to place it horizontal (if you have; if not, just use a flat surface). To prevent rice sticking on your fingers, wet them a bit with water, and spread a thin layer of rice on the sheet, making sure to leave 1cm of space at the end furthest from you. Press the rice gently down with the palm of your hand. Arrange a few slices of cucumber, carrot and your fruit of choice in one horizontal line below the center. Lift the end of the mat, and gently roll it over the ingredients, pressing gently. Roll it forward to make a complete roll. Repeat with remaining ingredients. If you work without a mat, just lift up the part of the sheet closest to you, and roll it over, tuck it in a bit, and keep rolling untill the end. Your roll is done. Refrigerate until serving. Find your sharpest knife and cut the sushi roll into slices. Serve with Teriyaki or soya sauce and wasabi if you have. Enjoy! ๐ฅข

Did you know quinoa grows in Portugal as well as multiple other European countries? Find the one from your country, and in the meantime get inspired by this recipe ;)
Quinoa beetroot burger
* olive or rapeseed oil to fry
* 1 red onion, finely chopped
* 3 large garlic cloves, minced
* 1 cup slightly overcooked quinoa
* 2 small beetroots or 1 big one, peeled and grated
* 1 tablespoon mustard
* 2 tablespoons breadcrumbs or grind line seed
* sea salt and pepper to taste
* Any fresh herb of your choice, like chives, parsley, basil,... chopped
Itโs quite easy once you have all the ingredients. Just mix in a big bowl with your hands, it feels great! Then make patties around 100grams each, or whatever size you like. Fry both sides in a bit of oil until crispy on the outside.
Serve it just the way you like it, in a bread bun, with rucola, spinach, caramelised onions, grilled zucchini or eggplant, whatever works for you ;) Enjoy!

The recipe
In a bowl mix 1cup oats, 1cup whole wheat flour, 1/4tsp salt and 1tsp baking soda. Take a small bit of the flour and sprinkle it over 1 cup of frozen blueberries, mix well so all the berries are covered in a thin layer of flour.
In another blow combine 3/4cup almond milk, 1/2cup any type of plant syrup (like rice, maple or agave), 1tbsp oil and 1tbsp apple vinegar. Mix your wet ingredients with the dry. Then fold in your berries gently. Fill your (greased) muffin thins approximately 2/3 full. Put in the oven 180C, 20minutes. Pronto๐ง
Challenge of the day: making a birthday cake without oven๐ง๐ฐ๐ฅณ And the pancake-cake was born! With bananas from Madeira, Oranges and flowers from the garden๐ฅ๐๐Happy Birthday Rik๐๐ผโ๏ธ
And here is how you make it:
Make American Style Pancakes with 2cups of white all purpose flour, 2 cups of oat milk, 1,5 tablespoons of baking powder, one tablespoon of sugar, a pinch of salt and one tablespoon of melted coconut oil. Mix all ingredients together with a whisk until you have a smooth batter. Heat a frying pan until hot, lower your fire, put a bit of coconut oil in your pan and poor a bit less then half a cup of the batter in the pan. Turn your pancake until a good amount of little wholes/bubbles start to appear on the surface. Make as many pancakes as you want to make layers. Slice up bananas, take out your favourite jam or marmalade and start to build some layers. For the chocolate sauce, melt two bars of chocolate bain-marie (which means one pot of water on a low fire, and a smaller pot inside the pot with water, with chocolate) Slowly your chocolate will melt. Be careful not to let the water boil or that water comes in contact with the chocolate. Add a tablespoon of coconut oil and half a cup of oat milk. Mix slowly and poor over the top. Decorate with fruits and/or edible flowers๐

Ingredients for 1 cup
* 2 tablespoons spelt flour or all-purpose flour
* 2 tablespoons peanut butter (Itโs nice to use one that has only peanuts and no added sugars or preservatives)
* 2 tablespoons unsweetened almond milk ( or oat milk would work too)
* 1 tablespoon of any plant syrup, this could be agave, rice, maple (could substitute granulated sugar or brown sugar)
* 1/4 teaspoon baking powder
* 1/2 teaspoon pure vanilla extract (optional)
* dark chocolate chopped in small chunks
So get yourself a cup thatโs ok to use for a microwave or oven. I used an oven to make these. Add all ingredients in your cup, mix well with a fork. It might seem lumpy at first but keep stirring and itโll resemble cake batter in no time!
Preheat the oven at 180C and cook the cups for about 15 to 20 minutes. If you want to make it in the microwave, set in on high, for about 45-60 seconds,until the cake has risen and springs back slightly when you poke it. If itโs not done after 60 seconds, try cooking in 15-second intervals until done.๐ช

Quick pickled onions are really easy to make. Slice your red onion in fine half moons, fry them on a low fire in a little bit of olive oil. After 15minutes, add a bit of apple cider vinegar and any plant based syrup, like agave, rice or maple. Let it fry/cook for another 5minutes. E pronto!
