Tannins are one of the most important elements in the quality of wines! 🍷
They belong to the group of polyphenols, which are colourants with a bitter taste that influence the structure of the wine.
They are present:
👉 In grapes (skins, stems, and seeds),
👉 In wooden barrels where the wine ages.
Tannins give wine aging potential, structure, body, and flavour.
"But how do you identify the tannins in wine?"
👉 Just pay attention to the sensation of dryness in your mouth.
When you take the first sip, spread it throughout your mouth. If you salivate, it's acidity; if your mouth feels dry, it's tannin.
