Have you see anything so stud💪 and cool😎 to eat ever? Take a look at the Nigerian Egg Buns…it’s a street food enjoyed by folks all around the world and I am gonna teach you how to make it while you are still quarantined😤.
Ingredients are
2cups of flour
6 boiled eggs
1large fresh egg
2tbsp Butter
½ Evaporated Milk
½ Tsp Nutmeg
½ tsp Baking Powder
Pinch of salt
2tbsp brown sugar
Sunflower Oil (for deep frying)
Mix all ingredient together in a bowl until mouldable consistency, mould into 6balls and flatten to insert egg into each ball. Close back in round manner to form perfect baseball size. Deep fry until golden brown. Serve with Milk or your favourite fruit juice🥰. It can be eaten anytime of the day and can last up to 7days in a fridge🥳.

Kitchen utensils worth investing on series 3👨🏻‍🍳👨🏻‍🍳

its been a very long while peeps, How una dey?
(meaning "How are you"? In pidgin English). Yes i miss you loads...and today i am inspired to continue with my series of the kitchen utensils I am keen you have in your kitchen and today I will be talking about the Air Fryer. Talking of eating healthy, your fries, chicken, beefs, nuggets, fish and all forms of food that you fried doesnt have to go into the oil anymore cos this air fryer will do justice and you have a perfectly fried dish🍗🍖🥙🧆. Now the below are the things you have to consider while you are in the kitchen section of your store.
1. Affordability🤑: this top my list when it comes to buying any gadget for my home itself, i am of the school of thought that a good life doesnt have to be expensive, same goes for a good kitchen utensil does not have to cost you arm and leg. Again I will say, target the very good time when there will be sales in the stores to buy the "expensive" air fryer but ensure it meets your pinned criteria. You can also buy it second hand if that works for you, simply confirm when the first user bought it/year of manufacturing, shouldnt exceed 2yrs, else buy the brand new during promo sales and it will still have a good salvage value.
2. Wattage: If you are paying electricity bill, this comes handy for you, you do not need all these gigantic air fryer with huge wattage that will make you cringe when you see your bill at the end of the month. My air fryer as shown in the picture above is just 1440Watts and 250V, very perfect for a home but if you will be buying for business, you can consider buying something higher to cater for the client influx. Sometimes when I have to cater for quite a number of guests, I do make use of my air fryer, though it takes time but with proper timing I achieve what i want without having to deep fry whatever it is.
3. Ease of Cleaning👨🏻‍🍳: i know right? the struggle is real when it comes to cleaning of these gadgets, try to check if the air fryer has hidden compactment your dish washer or your hand cannot reach before swiping your card at the store. Any air fryer must be easy to clean, mine is just 4pcs, the main body, the cover, the inner bowl and the seive like bowl. i can easily use foam and soapy water to wipe the main body and the cover (cant be washed in dishwasher cos of the insulation layer in it). The bowl and the seive bowl can be tossed into the dishwasher else grab your scrubbing brush and wash it off within few seconds in the sink. PS: I advise you wash almost immidiately after use, when its cool at least, else, it could get stickily annoying to wash it off by hand or it will spend donkey years to get the dishwasher to make it sparkling.
4. Ease of use (technology)👨🏻‍💻: This sometimes put so many people off cos of the complicated jargons that they might not understand which is packed on the air fryer. Mine has only one k**b and the chart of different foods to be prepared. A friend who used a digitalised air fryer confessed its not the best as its not easy to repair compared with the ones having the manual k**b you have to turn for timer. Though the digitalised air fryer has its own advantage as you can set the temperature of whatever it is that you want to fry but mine use the timer technology and heats evenly.

PS: I have had this air fryer since 2016 and it has never for a day packed up and it comes handy, i have used in for both commercial and domestic use. It makes my Boli moments a time to look forward too. You can use it to make Suya and to grill fish also. It is definitely a must buy if you are trying to cut down on oily foods and eat healthy. Hi folks, it's been a while and I surely miss yall. Today I want to clear some of the Misconception about marinating your meat.
What is marination? In lame man terms "it means you want your condiments flavor to be well infused in the meat"... Shey you Gerrit now😅. You will agree with me that a well marinated chicken is tastier😋 than the one you just toss on fire and added the condiments, reason you keep going back to all those fancy restaurants (even though only few of them gets it right. well, I am not here for restaurant review today😉). A marinade could be as simple as adding only salt and it could be pimped with different range of herbs and seasonings. To marinate my chicken, I use
- Blackpepper
- blended sctotchbonnet pepper
- salt
- grounded Tumeric
- Ginger and garlic paste
- Lemon squeeze
- Curry and dried thyme
- Soy sauce or any seasoning cube
- Red Onion paste (for sweetness)
Add all these to your chicken about 45minutes before cooking and ensure each and every meat is well coated.
Now the question is where do I put my marinated chicken to rest, on kitchen table or freezer or fridge. The best place is in the fridge. Why? As the temperature of your chicken drops, the condiments will increase the acidity and therefore it will easily breed bacteria. Hence the fridge is best. If your home is cool and temperature is less than 40deg celcius, you can take the risk and place it on your table top. If you will be grilling/deep frying the chicken, best is to place it in the fridge, it will also ensure your chicken is perfectly moist inside and crispy on the outside.
If you'll boil the chicken and fry later, place in a pot after 45mins or overnight,fill with water to cover the chicken, boil for about 10-15mins on high heat, leave to rest in the chicken stock for about 40mins, then toss into the air fryer😍 or bake in oven💞 or fry in oil😑. I always use my chicken stock for Nigerian fried rice😋 or Nigeria smoky jollof😍 (watch out for the recipes) Dont forget to follow us on our Social media handles Chao

This is Suya. Oh My God... One thought of it, I start drooling – its sumptuousness is engraved in my heart, mind and tummy.

Suya is Nigerian street food at its very popular – it is never made at home. Well, almost never. The exceptions? If you invite the suya man himself into your humble abode to rustle some up and if you are (like me), away from home, in diaspora and hankering after spicy meats of years past, then of course permission is granted to ‘try this at home’.

So what is suya? It is similar to the Arab Kebab, but thin strips of steak (sirloin, flank or topside) are coated in a dry peanut rub (Suya Spice or Yajji as its fondly called in Nigeria), Chai, the flavours heightened by a balanced combination of the spice and Groundnut Oil or any oil of your choice, some people even use olive oil to make their foodscape treat seem healthy😂.

The cut of meat matters alot cos I have made mistakes cutting into big slices, it has to be thinly sliced, thanks to the sharp chefline knives(they didnt pay me for advert o).

My version works a treat with homemade Suya spice (Which is easy blend of some spices, you can DM me on how you can make it in few minutes with simple ingredients) else use salted peanut butter and not the sweet/sugary ones.

Also you can improvise with other types of meats other than beef, you can use mutton, chicken breast, duck meat, cow leg(Jesus Christ, guys, this type of suya is on another level), cow tripe, cow intestine and so on.

Useful tips:

Its easier to slice the beef if you freeze it for an hour prior to use

You can use store-bought salted peanut butter but you will need to thin it by gentle heating to which you can add a dash of groundnut oil or any oil of your choice to create a thick pouring consistency

The spice measurements are a guide - adjust them to suit your taste.

Note, the best tasting suya is cooked, left to rest for a couple of minutes and then reheated gently in the oven(which I used in my case) or over the flames...of your BBQ!

Ingredients:

500g Boneless Beef (Sirloin Steak preferably)

1/2 Cup Suya Spice

1/4 Cup Groundnut Oil(sold by kulikuli sellers in Nigeria)

8-10 Skewers

1 Seasoning Cube

Instructions:

Soak your Skewers in water for at least 12 hours. This process ensures that your skewers do not burn during the grilling process.

Wash your meat thoroughly and slice against the grain into thin pieces. You’ll need your Beef slices to be as thin as possible for fast and even cooking. Then, cut into small strips..

Insert the skewer into the meat, do not over clog your skewer. use your kitchen brush to rub your spice mixture on the meat, ensure its well coated with the spice. Let it marinate in Fridge (not at room temperature pls) for about 1hr. Toss in the oven and set your oven to grill for about 15mins depending on the power of your oven, mine uses about 12minutes. Turn off the oven and let the suya seat and cool in the oven for another 10mins, coat again with wet spice and set oven to 10mins low heat. Remove the meat from skewer and garnish with cucumber, cherry tomato, cabbage, lettuce or any vegetable of your choice. Dust some dry Suya spice on the meat again...Heaven on earth begins...

You can eat this as it is or eat with rice, noodles, bread, yam or any food you can combine it with (you choose).

Now go ahead and prepare this mouth watering treat for your family this festive season.

This is Nigerian Spicy Puff puff🥰, it is a deep-fried dough, which are made from yeast dough, shaped into balls and deep-fried until golden brown. It has a doughnut-like texture but slightly more chewy which is very common snack eaten by so many countries but with different names, the Arabs🧝‍♂🧕 even deep it in sugar syrup to make it sweeter, some Asians👨‍👩‍👧 will dust powdered sugar on it to satisfy their sweet tooth, different folks with different variation in the mode of preparation.

For Nigerians, puff puff needs no introduction. Very few people can resist their allure.

Ingredients are

2 Cups flour

11/4 Cups Water

2 Teaspoons Yeast

1 finely chopped Scotch Bonnet Pepper

1 Teaspoon Nutmeg

1/2 Teaspoon Salt

1/4 to 1/2 Cup Sugar + 1 teaspoon of sugar for proofing the yeast

Enough Sunflower Oil for deep frying

Instructions

Mix half of a Cup of water, 1 teaspoon of Sugar and the Yeast in a Bowl. Cover with a lid and set aside for 4-6 minutes to wake up your yeast from slumber😁.

In another bowl, mix the Flour, Sugar, Salt, and Nutmeg (dry ingredients).

Mix together the proofed yeast and the remaining Cup of Water with the dry ingredients and mix until the batter is lump-free. Add the Scotch Bonnet Pepper and mix well.

Cover the dough and allow it to rise for 1 hour (the risen dough has a distinct sweet smell, that's how you know you are doing well so far)

Preheat the Oil to 360°F and scoop a little bit of dough just like the size of a Table Tennis ball using ice cream scoop or your hand(which I prefer, though it takes a little bit of mastery to do it with your hands). (You can make it bigger or smaller if you wish) and drop inside the oil.

Fry both sides until golden brown. If you are finding it hard to turn the puff puff while frying you can just press down the balls a little bit before turning it. Serve it hot to your loved ones as dessert, or breakfast with hot tea or beverage of your choice to give some warmth combining the spicy taste of the puffpuff.

This can be stored in fridge also in an air-tight container for close to a week.
