The development of the gluten-free diet is attributed to Dutch pediatrician Willem Karel Dicke, who oversaw a ward for children suffering from celiac disease. During the Dutch Famine of 1944-45 (when wheat was in short supply), he noticed that their health, unlike almost everyone else, improved dramatically. However, when the patients received wheat products again, they quickly relapsed.
The good doctor then went on to further refine and develop the gluten-free diet, which is still today the only treatment for celiac disease.

Un studiu derulat de Centrul de Boala Celiaca de la Universitatea Columbia a constatat că 28% dintre pacientii cu boală celiacă au avut comportamente alimentare la risc la intalniri, iar 7,5% au consumat gluten în mod intenționat. Datele au fost prezentate sub forma unui poster la Simpozionul Internațional de Boală Celiacă de la Sorrento din 2022.
