It may be because your dough is not well kneaded and gluten is not well developed, or your dough is not well fermented. WHY IS GLUTEN DEVELOPMENT IMPORTANT? Think of gluten as the net that holds bread together; it helps dough rise by trapping gas bubbles during fermentation and gives bread its unique texture. HOW TO CHECK FOR GLUTEN DEVELOPMENT? 1. Dough is soft, pillowy, and surface is smooth. 2. Windowpane test - you can stretch dough till its very thin without it breaking. HOW TO CHECK FOR WELL FERMENTED DOUGH? 1. Belly button test - poke a finger into the dough and it goes right in, like your belly button. It should rise back up slowly.
