All of us at Uya 四代目菊川 are very excited to be able to share with you the cumulation of almost a year’s work with our Japanese partner (a fourth generation unagi wholesaler and restaurant owner) to bring to Singapore authentic ungai dishes which are true to the quality, taste and standard found in the top unagi restaurants in Nagoya (one of the 3 prefectures in Japan famous for its unagi). We are very proud of the authenticity of our unagi, which we put a lot of effort into to ensure.
To start with, we use only what is commonly referred to as “Japanese eels”, or to give the species its proper name - Anguilla japonica, in Japanese, 日本鰻 nihon'unagi. As eels cannot be bred in farms and are merely raised in farms, we obtain our eels from trusted farms in various countries depending on season and quality (including Taiwan and Japan). The key, as with all good food, is to first start with the highest quality ingredients, in this case by ensuring that we have quality Anguilla japonica. For this reason, the eels which we use are smaller in size than conventionally found in Singapore. These smaller eels are more highly prized in Japan as they are less tough and contain more of the quality oil, and hence more vitamins and minerals, as compared to the larger eels (an analogy would be veal vs beef).
These hand-chosen eels are then air-flown in twice a week to our restaurant where they are stored 24 x 7 in our tabeta, a custom-built facility which continuously circulates clean and temperature-controlled water to ensure that the eels are kept clean, fresh and in optimal conditions. The tabeta is what eel distributors in Japan use and represents a unique investment on our part to utilize the far superior alternative to using a normal tank.
We regularly see much debate about the level of “char” on the unagi and this is very much a question of personal preference. As our aim is to offer Nagoya-authentic unagi, our chef who hails from Nagoya and has worked in the top unagi restaurants in Nagoya, aims to deliver a grilled unagi which is exactly the same as you will find in Nagoya. This means a lower level of char (ensuring that the vitamin and mineral filled oil is preserved and not burnt into carbon) with an evenly toasted and crispy top layer of flesh and skin while maintaining fluffy and creamy meat. This requires a great level of skill and control of the coals and the grilling on the part of the chef. We would invite you to watch through the glass window in our restaurant (from a distance as the glass gets very hot) how much care and attention is paid to the grilling of each piece of eel to ensure this.
