How Do I Make Pita Bread With Akmaya Yeast?
In order to get the best result, Akmaya dry yeast is the secret ingredient in this recipe.
Ingredients
2 teaspoons Akmaya dry yeast
½ teaspoon sugar
¼ cup of whole-wheat flour
2 ½ cups of unbleached all purpose flour
2 tablespoons olive oil
1 teaspoon kosher salt

Step 1: Add the Akmaya yeast to the whole-wheat flour to ¼ cups of all purpose flour and mix. Place the bowl to a warm place and wait until the blend is foamy and bubbling, this is for around 15 minutes.
Step 2: Mix salt, almost all of what is left from the all-purpose flour and olive oil with a wooden spoon. Your mixture should form a shaggy mass. Place your dough on a floured bowl and then knead for around a minute, making sure that the consistency is same throughout the dough.
Step 3: Gently knead the dough for 2 minutes; keep kneading until it is smooth. Cover the dough and wait for 10 minutes, then knead for 2 minutes. To ensure the dough is a bit moist and not too dry, don’t add too much of excess flour. Now the dough can be refrigerated in a plastic bag overnight. Take the dough back to room temperature and knead into a circular shape.
Step 4: Put the dough back into the bowl, firmly cover the bowl with plastic wrap and cover with a towel. Set in a warm place and wait for 1 hour for Akmaya to double the size of the dough.
Step 5: Heat the oven to 245 degrees and beat the dough down and divide it into 8 equal sized pieces. Mold the dough pieces into a small ball shape. Set your dough balls and cover them with a damp towel, come back after 10 minutes.
Step 6: Gradually remove 1 ball (others stay covered in towel) and press into a horizontal disk, with the help of a rolling pin if needed. Roll the dough into a 15cm circle, then to a 20cm diameter, around 3mm thick, use some flour if needed.
Step 7: Slowly lift the dough balls and set them on a hot baking sheet. Wait for 2 minutes and your dough should be puffed. Flip the Pita bread and bake for 1 more minute. The color should be light but have small brown speckles. Carry the pita to a bowl or a basket and cover to ensure the bread stays soft and tasty. Repeat this with all of your pita breads. You have successfully completed your perfection pita breads. Enjoy!
