𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦
2 tbsp Yellow onion (freshly grated)
12 oz Canned salmon (drained)
1 large Egg
115g/ 4 o.z cup Mayonnaise
30g/ 1.12 o.z Pork rinds (crushed)
3/4 tsp Italian seasoning
1 1/2 tsp Sea salt
1/2 tsp smoked paprika
1/4 tsp Black pepper
3 tbsp Olive oil
𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦
Combine all ingredients except olive oil in a bow. Mix until just combined, but don't over mix.
Form mixture into 6 patties and place on a parchment-lined baking sheet. Patties will feel wet and sticky. Refrigerate for 30 minutes to firm up.
Heat the olive oil in a large skillet over medium heat. Add salmon patties to the skillet, and cook for 3-4 minutes, until golden brown on the bottom. Flip patties and cook for another 3-4 minutes, until browned on the other side
For vegetarian option: omit pork rinds
Can also use canned tuna or crab meat for this recipe ! 😁😁

Ingredients 📝
4 eggs
1/4 cup almond milk or water
1/2 teaspoon salt
1 cup almond flour
1/4 cup melted butter
2 teaspoons baking powder
1/2 cup chia seeds (this is optional)
Instructions👩🍳
1. Add all dry ingredients to a bowl
2. Add all wet ingredients to another bowl
3. Pour in wet ingredients into dry and stir well until even.
4. Line baking tin with parchment paper
5. Pour mixture into a baking tin
Bake at 350° for 30minutes until golden

Ingredients 📝
1/2 lb Mexican chorizo (casing removed if it comes in links) : Can substitute for tofu dogs
8 large eggs
1/4 cup heavy whipping cream (can substitute for coconut milk if you're dairy free)
1/2 cup shredded Cheddar or Monterey Jack
2 medium green onions, sliced (white and light green parts only)
3/4 tsp salt
1/2 tsp pepper
Instructions👩🍳
1. In a medium skillet over medium heat, sauté the chorizo until cooked through and no longer pink, 7 to 8 minutes. While cooking, break up an clumps with the back of a wooden spoon. Set aside to cool.
2. Preheat the oven to 375F and line a muffin tin with parchment or silicone liners.
3. In a large bowl, whisk together the eggs and cream until well combined. Stir in the chorizo, cheese, green onions, salt and pepper until well combined.
4. Divide the mixture between the prepared muffin cups and bake 25 to 30 minutes, until puffed and golden brown. Remove and let cool at least 10 minutes before serving.

Mini Keto Raspberry Vanilla Cheesecake!! 💥🍰🍓
📋 INGREDIENTS: 14 Cakes
Cheesecake base:
180g almond flour
55g Erythritol
140g butter, melted
Vanilla and Raspberry Cheesecake:
500g cream cheese
280g heavy whipping cream
1/4 cup water
10g gelatine
70g Erythritol
1 tsp vanilla essence
125g fresh raspberries
Mixed berry compote:
2 cups mixed berries (fresh or frozen)
1/4 cup water
1 tsp Erythritol
Squeeze lemon juice
👨🏽🍳 INSTRUCTIONS:
1. Mix almond flour & Erythritol in a mixing bowl. Add melted butter and mix.
2. In silicone tray, fill each hole with a tablespoon of base mixture and spread evenly. Place trays into fridge to set.
Prepare cheesecake mixture.
3. In a bowl add gelatine and water. Stir and allow to sit for 5mins. Add Erythritol and vanilla essence to the gelatine and melt in the microwave. Stir and repeat until completely melted.
4. In another bowl add cream cheese and cream. Using a hand mixer beat together until smooth and fluffy. Pour gelatine mixture and continue to mix until well combined.
5. In a small bowl mash the raspberries to desired texture, fold this through the cheesecake.
6. Remove trays from fridge and fill with cheesecake mixture. Place back in the fridge to set for minimum 4hrs.
7. Once set remove from moulds and store in an airtight container in the fridge/freezer.
8. Before serving top with berry compote.
9. Place all ingredients into a medium sized pot over a medium heat. Allow sauce to come to the boil and stir to start to breakdown some of the berries. Cook sauce for 5-10mins.
10. Remove from heat and allow to cool before topping cheesecakes.
