Pelau is a Caribbean dish native to the beautiful isle of Trinidad and Tobago. Its a one pot dish that is made by stewing Chicken in browned sugar and adding pigeon peas, rice, freshly chopped and grounded green seasonings pimentos thyme bayleaves culantro garlic etc and notwithstanding coconut milk which is integral to this dish.the possibities are endless on what can be added to a pelau from carrots to corn.
