Y'all know what time it is!! It's season! Preparing the leaves in advance makes it so much easier to actually prepare your pastelles when you're in the hustle and bustle of . I used to cut the leaves, wash them, them warm them up to makes them pliable, but my uncle-in-law mentioned that he warms the entre leaves which is honestly much easier. I then place the prepared leaves into 2 plastic bags, freeze them, and thaw them out when I'm ready to use them.
