We're having some fun again this week with a seasonal riff on one of the four great pasta dishes of Rome, cacio e pepe.
Like many of Rome's best dishes, a good cacio eΒ pepe is all about simplicity.Β Classic versions call for just freshly ground pepper and Pecorino Romano, a Roman sheepβs milk cheese.
This week's special pizza, The Cacio e Piselli, is our spin on the classic. We top it with black pepper, stracciatella, pecorino, and fresh peas (piselli) to bring it into the season. We love how the sweet pea flavor pairs with this rich and cheesy dish. PRO TIP: Add prosciutto on top! πππ

Calabria is the toe of Italy's boot and is known for its eponymous local chili peppers, Calabrian chilis! We love how bright and fruity they are (think warming heat vs. intense burn) and we put a lot of them on one of our favorite pies, The Spicy Chad.
The Spicy Chad is making an appearance this week as a special, but it has gained a following over the years as a secret off-menu pie.
When tasting the CirΓ² Rosso Classico, a new addition to our wine list from Calabria, immediately thought of his namesake pizza for an excellent pairing.
