While clearing my Asian fridge earlier 🤣 Looks like rice is taking a backseat tonight! Got lotsa good cheese to finished up, so keto friendly pizza is in order! I used only 1 medium sized potato here, optional if u chose not to. Super easy under 30-minute meal.

Always wanted to try making my own cauli pizza. Tonight's the night!! Easier than I expected since I got a few more cauli around to experiment 😅 It was so freaking delicious!!!!

RECIPE: Air fried Cauli Pizza

Ingredients:
Cauli crust:
1 medium sized cauliflower, grated
Pinch of salt, pepper & Italian seasoning
1-2 tbsp fresh minced garlic
2 eggs, beaten
Your fave pizza toppings

Steps:
1. In a heated pan, fry everything until dry, until there's no moisture. (Didn't take long, like 5 min. tops)
2. Let cool & mixed in eggs.
3. Spread out the mixture into baking pan.
4. At 350°F — baked in oven air fryer for 15-20-min. & 10-min. on the other side.
⭐ Pro tip: No flipping required here, coz I use my pro smart oven that allows adjustable heat source. Turned the bottom heat to high, top fan off for the last 10-min. to brown the bottom crust. Air fryer oven has 3 heat source: top, bottom & rear.

5. Top ur crust with your fave toppings:
Here I used Italian sausage, onions, mushrooms, serrano chillies, mozzarella cheese, Basil & Parm cheese

If you ever caught a fish, what would it be?

I got so many faves, Salmon is our weekday go-to as it's super easy to prep & make over. With a little luck — leftovers are good to go in onigiris, sushi/rice paper wraps with ur other fav fillings. Very kid friendly for school lunch meals & as for me, I like it in Donburi bowls, served with a side of cold 🍺🍸🥃 😉

So I always have a few typical Asian household canned foods around .. sardines, luncheon meats (no shame) 😅, & roasted eel fish is one of them. I used it for porridge especially, lazy unagi donburi/sushi mostly. My easy meal is pretty much set. My second pantry staple here is rice paper. Every Chinese festive season, I think of my parents customs & unique ways to celebrate with family & friends. To me, putting tradition on the table also means creating my own family tradition here in my American home while incorporating nostalgic memories I cherished from my far away home where I grew up, Malaysia. No matter what you put on the table, it is your own personal stories & traditions that makes yours unique!

Early sunrise, my Dad would go to the wet market & pick the freshest live chicken and bring it home. Just like any other Chinese festivity, serving chicken dishes is customary & dad will prep the whole 9 yards. His go-to style is poaching or steaming with simple aromatics as Hakka food typically adopts a rather minimalistic nomadic cooking style.

“Let the bird shine on its own, so sweet & fresh you don’t need much!”, his words.  At the dinner table, me & siblings will anxiously compete with rock, paper, scissors coz we want the leg, drums & wings..dark meat are such popular hits in our household! You see why there’s always thighs & wings on my feed? 😅

That brings me to today's dish. Fresh leg quarters is cooked & smoked in my late Mom's 40 year old steamer wok. So harmonious & beautiful, with a touch of Dad & mine combined, it's the perfect elevation to celebrate with my family this Chinese New Year!🧧🐰

RECIPE: Tea Smoked Spiced Chicken
(Cook time: 25-min. | Smoke time: 15-min./+)

Ingredients:

1 stalk scallion, cut into 4

Just like the American tradition Xmas holiday, Dongzhi Festival (端午节, Dec. 22nd) is an important day of the lunar calendar. The last few weeks was quiet for me as I took time out to heal from back fall & then twisted my left thumb after 🥺 I appreciate you guys hanging in here until I'm up to cooking again! 🙏

As we are approaching winter solstice day, I remembered how my late Mom prepared for this auspicious day. She would make a huge batch of GLUTINOUS RICE BALLS in sweet gingery broth or sometimes we would dunk them in some sort of nutty dessert soup, or sometimes at each other?😂 STAY TUNE as I'll be sharing a sweet rich dessert after this post! Tang Yuans are also served on the last day (15th) of the Chinese New Year. If you're big fan of mochi-like soft & chewy rice balls, do save recipe for later!

I love Chinese restaurants style steam fish but I can never cook it like their huge commercial steamers which fits a whole fish & yields even cooking. I have one of those traditional big steamers one that my late Mom passed down to me, but it's rather old, water droplets tends to get into food, soggy & it was getting time consuming to even preheat it to begin with. Not only that, there's no automatic shut off nor warning when water is low 😬 yea burn my bottom tray once or twice! Here's a sweet & savory recipe that will turn your sumptuous looking buttery salmon into a very fulfilling holiday feast. 

RECIPE: Miso Honey Dijon Salmon
(Total time: 25-mins. | Servings: 2)

Ingredients:
2 (5 oz) @bluehouesalmon Salmon fillet
2 cedar planks (or 1 that fits all, soaked in water for 2-hours)
Asparagus, trimmed ends (seasoned with salt, pepper & olive oil/melted butter)
Salt & pepper

Marinade:
1/4 cup honey 
2 tbsp Miso paste, white
2 tbsp Dijon mustard
1 tsp rice vinegar
1 tsp Mirin
1 tsp Sake 
2 tsp soy sauce
1 tsp minced garlic

Method:
1. Mix well the marinade ingredients. 
2. Coat enough marinade onto the salmon fillets, dash of salt & pepper & marinade for 15-min. 
✳️Leave salmon at room temperature 15-min. prior to cooking. 
✳️ Extra marinade is use to dress the salad. 
3. Preheat oven to 400°F for with cedar planks on a foiled baking pan. 
4. Place marinated salmon on cedar planks (skin side down) & arrange asparagus on the foiled pan. 
5. Bake for 10-min./internal read temperature at 120°F-130°F/desired doneness is achieved. 
6. Rest aside for bout 5-min. & ready to serve.

Ingredients:
1 (12 oz) @bluehousesalmon salmon fillet, remove scales, clean & pat-dry
👉 Here, I've used the end tail of a whole fillet 
Chipotle Marinade
Salt & pepper
1 tbsp honey (optional)
Avocado Salsa
1/2 a lime, zest
Cilantro, loosely cut

Chipotle Marinade:
2 tbsp cooking oil
1 lime, juice 
I Chipotle chili (from can Adobo)
2 tsp Adobo Sauce
1/2 tsp cumin seeds
1 clove garlic
👉 Blend the ingredients above. Set aside. 

Method:
1. Preheat oven to 400°F & put a baking pan lined with foil in the oven. 
2. Coat salmon with marinade, pinch of salt & pepper. Marinate for 10-mins. ✳️Leave salmon at room temperature 15-min. prior to cooking. 
3. Make Avocado Salsa: avocado, tomatoes, red onions, cilantro, lime juice, salt & pinch of sugar.
4. Place marinated Salmon in baking pan (skin side down). Drizzle some honey all over fish, if need to (optional).
4. Bake Salmon for 10-mins./until internal temp reach 120°F-130°F/desired doneness achieved. 
5. Rest for 5-mins. Lime zest over. Ready to serve.

Back then, college dorm is no fun when comes to meal time. To be able to enjoy home cooked meals is hard to come by. I'm always looking forward to some weekends when my college mate invites me over to his family host dinners. A bowl of rice, meat & veges, suffice to say is truly precious. It hits home!

That brings me to what I cook for ya all today. A little extra simple humble meal. So big on flavors!😋

🥩🥬🍚A PREMIUM Super Beefy RICE BOWL!
This is a SOBORO DONBURI bowl with simmered ground Black Angus Ribeye & veges in a savory sauce served over rice. "Soboro" means ground meat/any other protein.

An Extra Special Sauce (すき焼きソース)
If you're feeling something sweet, savory & Umami, try cooking this with Sukiyaki sauce.

Cook Notes: Please make extra sauce to spoon over your hot fluffy rice, so good. May use sauce as marinate, Yakitori glaze/in BBQ, or add into Dashi stock for traditional Sukiyaki hotpot, which I'll be doing soon. Stay tune! 💕
