"The excitement you see in this picture doesn't compare to the happiness I'm feeling right now!!! Here's a brief summary of my story. 2 years ago I was in and out of the hospital for months. They ran so many tests on me to try and find out why I was feeling so tired (like took a 10 minute nap in my car between jobs to try and make it through the shift and go to bed at 6 pm and bedridden for months kind of tired), dizzy, lightheaded, had a fast heart rate, was losing weight rapidly, etc. I was so sick I was tested for leukaemia, diabetes, pancreatic cancer, etc. After MANY tests and weekends in the hospital, I was diagnosed with Postural Orthostatic Tachycardia Syndrome or POTS syndrome. This is where your blood vessels in your legs don't constrict to pump the blood back up to your brain and heart- leaving the blood puddled in your legs. Your heart and brain lack the blood and oxygen needed. There is no cure. I was told I should do only mild walking for exercise. I was told I could never run again or get my heart rate up to the point where I sweat. I was put on a steroid medicine to ease the affects of this incurable disease. I decided I wasn't going to be a victim, and I wanted to prove the doctors wrong. Fast forward two years later!!! I have taken myself off of the terrible steroids (MY choice completely) that caused migraines and replaced them with ItWorks greens and greens chews. CUCUMBER AVOCADO ROLLS

INGREDIENTS
1 Avocado
¼ Cup of Basil Leaves (a small bunch)
1 Clove Garlic
2 teaspoons Lime Juice
¼ teaspoon Salt
1 Tablespoon Nutritional Yeast
Several Grinds of Pepper
1 Cucumber
Smoked or Sweet Paprika for Garnish
INSTRUCTIONS
Toss all the ingredients (except the cucumber and paprika) into a food processor or blender. Or if you would like to do it by hand, finely mince the garlic and basil, and mash all the ingredients together with a fork until smooth and creamy.
Use a mandoline or potato peeler to cut long thin strips from the cucumber.
Take a cucumber strip and spread a thin coat of the avocado mixture along the length of the cucumber. A little goes a long way! Make sure to get some avocado all the way to the end, so it will stick the roll together.
Roll it up! No toothpicks needed. Do the same with the rest of your cucumber strips. Sprinkle with a little paprika and serve right away.
Cucumber is watery and softens quickly, so if you plan on bringing these to a party, prepare the avocado spread that morning, and store in an air tight container. Bring a whole cucumber and potato peeler and assemble at the party.
