Fall is here and so is the winter squash. My absolute favorite winter squash is the Delicata. You don't have to cut off the peel you just wash and take out the seeds and your ready to cook. My favorite way to cook this squash is to roast in the oven at 400 degrees. I am sharing a recipe on one of my favorite website. Give it a try!

Practice Gratitude is life changing! I read an article last night before falling asleep and wanted to share. Everyone should try to practice gratitude on some level. If you are feeling negative or unmotivated take sometime to refocus the negative energy and think of 2-3 things your grateful for... and notice the switch of energy. If we take a few moments each day to think this way we all would be in a better place! Keep me posted.

Love the Farmer's Market in Half Moon Bay on Saturdays. You do have to stand in line to wait to enter as well as some booths. Simms Organics has the best zucchini and tomatoes. The only problem is there is too many choices on tomatoes. I just ask the farmer to add his favorites to my shopping bag.

You can buy almond milk sweetened, unsweetened, vanilla flavored or plain. Have you ever made your own? It is super easy just takes a few extra steps but, it tastes so much better! Homemade milk is lighter and creamier with only a few ingredients. You can sweeten it with dates as well. Soak your almonds with filtered water for over 12 hours. Drain and rinse your almonds and add to a high powered mixer. I use my Vitamix and blend for a few minutes. Pour your milk directly into a nut bag over a large bowl and that is it. Enjoy!

One of the reason I started this page was to empower as many people to incorporate the power of plants. I have been eating whole food plant based for over 10 years now. One myth we all have heard will I get enough protein on a plant based diet? If you follow clean eating with lots of vibrant colorful leafy greens, whole grains, nuts and fruits you will never have to count your macronutrients. I incorporate organic tofu in my diet a few times a week. Make sure you buy organic extra firm. I place the tofu on a paper towel to drain first then cut it in small pieces on a pan rub some flavored cold pressed olive oil salt and pepper and place in the oven at 375. I cook it for about 45 minutes. Remember tofu is very bland and will soak up any flavors you use. Have fun you'll love it!
