Kale is a powerhouse of nutrients, boasting high levels of vitamins A, C, and K, as well as minerals like calcium and iron. This leafy green is also rich in antioxidants and fiber, which support a healthy digestive system and reduce inflammation, but you probably knew that!
This veg will grow into early winter. For those of you feeling the impact of our economy, stock up on this vegetable. Now is your time to freeze some for later! Aaaannnndddddd honestly, we love frozen kale in our smoothies.

Happy Summer! Need a boosting smoothie? This one is RICH with nutrients, fiber and protein! It's also a super thick smoothie perfect for a bowl!
2 dates (for a better outcome, soak your dates in hot water before pitting and adding them to your blender)
1/2 -1 juiced lime
1 cup of frozen berries (we used mixed berries)
1 frozen banana
1/2 cup of oats
2 tablespoons of chia seeds
3 tablespoons of h**p seeds
1 tsp of vanilla extract (for extra dessert vibes, this is optional)
1 cup of Trader Joe's Soy Milk (The one that has only water and soybeans!)
This drink has at least 30 grams of protein, tons of fiber and healthy fats. This smoothie will also keep you super full for longer. Feel free to add your own protein powder to amp it up even more!

It's the Beer Wizard here with your beer for this week. This is a lovely Czech style Dark Lager by The River Arts District Brewing Company . It tastes of roast malts, coffee, dark chocolate, freshly ground nutmeg and has a subtle campfire taste. A great reminder of summer to come. It is a soft beer with a lightly bitter finish. Perfect to warm yourself up in ready for spring! Happy sipping!

We had such a lovely time on Saturday with β€π©· Farmshire Animal Sanctuary π©·β€ A wonderful cause to support their animal sanctuary at Apocalypse Parlor. We also got to see Chill Tonic perform and there were tons of fun games! Thank you to Sarah and Eric for helping this awesome event happen! We can't wait for the next one! Lastest cookie obsession! Grapefruit Sugar Cookies with Sunflower Seeds! WE KNOW! It sounds crazy but we swear, they are DELICIOUS!
We recently brought them to an Asheville Vegan Society Meetup (which you can find more events on the MeetUp app) and they were all eaten! Also it's citrus season!
So here's the recipe:
The zest of 2 grapefruits
1/4 cup of fresh grapefruit juice (We suggest drinking the rest!)
1 teaspoon of vanilla
1/2 cup of coconut sugar (plus more for sprinkling on the cookies later)
1/2 cup of granulated cane sugar
1 cup of vegan butter (we love Country Crock's olive oil vegan butter)
2 cups of All Purpose flour
1 teaspoon of baking powder
1 teaspoon of baking soda
1/2 teaspoon of salt
1/2 cup of sunflower seeds
Preheat your oven to 350 degrees F. Mix your sugars and zest together until you can smell the grapefruit really well. Cream the sugar and butter for about 5 minutes. Add in your vanilla, grapefruit juice and salt. Mix until incorporated. Slowly add in all your dry ingredients (AP flour, baking soda and baking powder). Mix until combined. Scoop out your desired cookie size and put on a parchment lined baking sheet. Flatten the cookie gently on the top, sprinkle with some sunflower seeds and more coconut sugar. We suggest the sunflower seeds as a garnish and not mixed in as we found them to overpower the grapefruit flavor. Bake in the oven for 12-14 minutes. Let them cool and enjoy!

She's incrediblly inspiring and we woulnd't be here without her! We will be posting about her Vegan Wine 101 class in March! Happy Birthday Alley!
This beer speaks for itself. Cue The Sun Hazy IPA by Archetype Brewing .This beer is so hazy there is no seeing through it. It's got power packed flavor of grapefruit, apricot, orange and even some woodsy fir notes. It's a delightful treat we highly suggest checking out, specially if IPA's are your thing. Thank you Archetype for making great beer!
FOXY BEER NUTS! This is quite literally the easiest snack you will ever make. Perfect in time for the Super Bowl next Sunday!
Here is what you'll need:
4 cups of your favorite presalted nuts or seeds (we use almonds, cashews, pistachios and pumpkin seeds)
1-2 tablespoons of Extra Virgin Olive Oil (EVOO)
2 table spoons of dried Rosemary
2 teaspoons of paprika
1 parchment paper lined cookie sheet (or two small ones if you're me and want to create more dishes than necessary π€¦ββοΈ)
Preheat your oven to 400 degrees F. Put all of your nuts and seeds on the lined cookie sheet. Add half your EVOO and all of your seasoning. mix them around. If you feel like you need more olive oil to coat everything, add the extra tablespoon. Make sure everything is coated and spread out on an even layer. Pop in the oven when it comes to temp. Set a timer for 3 minutes. DO NOT WALK AWAY! Stay close as nuts and seeds burn easily. After the 3 minutes toss them around and bake for another 1-2 minutes. When they are toasted, lightly darker in color and the rosemary is fragrant, they are ready!
Let them cool and serve!
NOTE: If you used unsalted nuts, I would salt them before the go in the oven while tossing the other seasonings in. If you need to add more later after tasting, do it while they are hot. I would start with 1-2 teaspoons.
