Starchy veggies and fruit sometimes get a bad rap (which is silly). Your child has options for foods that are nutrient-dense. If they aren’t going for broccoli right now, try potatoes, sweet potatoes, etc. Beans are veggies too and a great way to get fiber, but if they aren’t going for beans, there are lots of fruits and veggies, grains, nuts, etc. with fiber.
No 2 foods are “the same” - each one has something different, and sometimes that “something different” is a flavor/texture that your child will actually eat.

Recently, our upstairs air went out…in the middle of the summer…
Right before a trip…
The one we came back home with Rona…
I’m talkin’ 85 degrees INSIDE while sick.
My sense of taste and smell were gone for about a week.
When I tell you I have not felt like cooking lately…*EYE* did not feel like cooking. (Intentionally spelled wrong for added emphasis)
But in the midst of the rain, you have to realize, there’s a lot to be thankful for. You realize there are blessings even when everything goes wrong.
We had the ability to go on a trip (& still enjoyed ourselves).
We had a cool place to stay while the air got repaired.
We were able to replace our air.
My smell and taste are returning, and we’re back in business!
So in case you don’t feel like cooking *for whatever reason because this isn’t a contest* here’s an easy option you’ll want to save.
It’s a twist on my One Pan Vegetable Scramble (from the Daniel Fast Meals Cookbook). Instead of using the stove, I added it to a sheet pan in the oven so I could chase these kids while it cooked 🤣.
This version includes roasted garlic chicken sausage, but the original all veggie version is from Daniel Fast Meals Cookbook.

Someone grabbed a grape off the vine and a fistful of my sandwich…
all within 3 seconds flat.
The grape was swiftly recovered.
The sandwich not so much.

I’m looking forward to more family time this weekend. Before bed, my oldest, the pint sized boss, reminded me that “Monday *is* the weekend this time, because it’s Memorial Day and there’s no school.”
