Baked by Brittany
I’m Brittany. I love baking. I am always trying something new.
Lemon buttercream and lemon curd
Raspberry buttercream
Espressos buttercream and chocolate shell-“mocha”
Coconut buttercream and chocolate shell-“almond joy”
Chocolate shells and espresso buttercream
Valentine’s Day hearts
Almond joy macarons.
I Have mastered bread making with this French loaf. Also, made my own tallow soap and body butter. This weekend I plan to make a double batch of cinnamon rolls and start on Valentines macarons
It’s been a while but broke out my molds to make some cocoa bombs with supplies I needed to use up.
He is at it again! These have fresh raspberry lemon buttercream
We did it! Well mostly my husband. Second batch and they are so good! We used cream cheese or buttercream on them and paired with homemade raspberry jam.
I have some extra for anyone in GA
So happy that my cinnamon roll recipe is perfect every time and easy to freeze and pull out as needed.
My husband started learning macarons and this week I’m going to tackle sandwich bread.
Finished up the last (maybe 🤪) of my Christmas baking! Packaged these paint your own cookies for my boys to give to their friends to take home
Christmas cookies for the teacher luncheon this week at the boy’s school.
Finally found a good recipe that never fails me. It rises so beautifully. I like to make a double match then freeze into 4 trays to pull out and make on the weekend.
Made a second batch of Christmas jam to keep and use throughout the year plus candied jalapeños and bbq sauce made with the leftover juice of the jalapeños.
We have two go to recipes for BBQ sauce now. Store bought doesn’t come close to making your own and it’s so easy! We also eat the jalapeños on EVERYTHING.
Yesterday the kids and I tried to make butter in a mason jar with marble. The result was whipped cream and sore arms. Today we tried again and made butter (right jar) and buttermilk (left jar)
Thanksgiving pies
Made a batch of Christmas jam today. It is AMAZING! I have also been prepping for holiday cookies. I have frozen sugar cookies, gingerbread oatmeal, cranberry orange, hot cocoa and M&M and have made chocolate covered pretzels.
This week I am also working on pumpkin and pecan “pies” (sugar cookies) for the boys teacher appreciation day which is themed with pies this month.
Made more applesauce today. Cooking in the crockpot is the easiest way to go! Also enjoyed some of the apple pie filling with vanilla ice cream and have perfected fluffy cinnamon rolls!
I’m able to score our favorite apples- evercrisp here. I used up half a bushel making up these- apple pie jam, applesauce (100% apples no sugar) and bourbon maple apple jam. My plan with the other half is to freeze some hand pies, eat some and maybe some more applesauce.
Lots of cookies for our neighbors and teachers here in Georgia!
Working on mastering homemade cinnamon rolls… forgot to take a pic before we dug in though. I still have some work to do but getting better. Open to any tips!
Pumpkin oat chocolate chip cookies
Today we decided to weigh my cookies. These thick 4” cookies are 4.6-4.7 ounces each. The 4” circles were 4.8-4.9 ounces each. Makes me feel a bit more guilty eating a whole one over 1/4 of a pound 😳
My youngest has changed his mind several times on what he wanted for his birthday. Most recent it was paint your own cookies in either monsters inc or Cars. So I made both for him. Tomorrow we will get to paint and enjoy them.
We also took in these sweet boys yesterday as a temporary foster placement- we stuck with the theme and are calling them Mike and Sully. They’ll be available for adoption soon through Friends of Dogs at Guadalupe County Animal Control. They have sooo many dogs in need.
