I feel very compelled to post this wonderful and tasty snack/lunch/dinner (I have honestly eaten this combination for breakfast— i love it so much!!!) all credit goes to of course! My favorite plant based chef and food genius.
I copied this recipe from the cheesy sweet potato grits with grilled avocado & roasted kale (pictured) — which was delicious also, but I have been eating the cooked kale NONSTOP ever since I shortened this meal by combining only the kale and shiitake bacon. THATS IT!
I eat this dish cold and it’s absolutely something I crave all day, everyday.
Ingredients:
Kale-
* 8 cups of chopped kale (any variety, discard stems)
* 1 tablespoon of liquid aminos
* 2 garlic cloves (minced)
Heat a large pot or Dutch oven over high heat. Add the oil. Once the oil is hot and shimmering, (I turn the pan back to low, otherwise the garlic burns quickly and it’s just not the same) add the garlic and sauté just until fragrant, about 30 seconds.
(I turn the flame back to HIGH) & quickly add the kale, stir once, then cook undisturbed for 1 to 2 minutes to allow the kale to crisp around the edges. Stir and repeat. Do this a couple times until the kale wilts and some pieces are tender. (Keep the heat on high so any liquid the kale releases quickly evaporates-you want it to get crisp on the edges, not steam.) Add the aminos and mix well.
The shiitake bacon I have added a picture of the recipe for— I recommend just buying her cookbook Unbelievably Vegan.

6 years in the making and EVERYDAY, I’m still confronted with the same decisions to make choices between what “fuel” my body needs, and food that I remember and have loved since childhood into my early 20s.
I’ve messed up, I’ll probably mess up more in my lifetime, but I had to learn and implement being kind to myself when I choose differently because that’s okay!!
Start slow, research and try 100,000 plant based recipes, and start with one meal you enjoy and could eat every week, then look for your second meal and KEEP GOING! Try changing it up, see what works for you, and what doesn’t.
You’ll feel different after your one meal, & eventually, THAT feeling will become something you are willing to chase after.
If I’m going out dancing, I’m about to eat me some plants so I can sustain longer and dance all night…this is the life I choose.
This state of mind I had to learn, and it took a lonnggg time, and it’s STILL a struggle but as late grandfather would say—
“Give out, but don’t give up.”

holy cow(-less!) or any animal for that matter 🌱 this is a delicious, plant-based, Asian inspired, vegan concept one of my clients told me about a couple months ago. I have been anticipating trying it out, and it was WORTH THE WAIT— we are IN LOVE! The fried chick’n Katsu box is insane, The chick’n is fried and perfectly cooked. Amazingly paired with steamed white rice and with the yuzu aoli is my favorite. You’ll want to wash that down with the Yuzu lemonade as well, the flavor combinations are sooo freaking phenomenal. Like Rob said “I could eat this everyday.” It’ll be hard not to…Order through their website for pick up or delivery! I ordered mine on it’s ready for pick up so quickly too which is what a girl on the go like me needs. Yall— I tried Plant Box yesterday and I’ve ordered it three times since then….you will not be disappointed 😍🌏🌱🍋🍱🥢🍚😋

Ingredients
1 large head of cauliflower, cut into florets
1/4 cup olive oil
1 1/2 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp salt
1/4 tsp chili powder
1/4 tsp black pepper
Instructions
Preheat oven to 425 degrees F.
In a large bowl, toss cauliflower with oil, then seasonings.
Place in a single layer on a baking sheet.
Bake for 15 minutes, then flip and cook for 10 minutes or until fork tender.

Ingredients
* 2 cups onions, diced (sweet or yellow-about 1 whole onion)
* 8 cloves garlic, minced
* 2 tbsp olive oil (or vegetable stock if oil free)
* 16 oz of ground impossible meat
* 1/4 cup ketchup (I used whataburgers spicy ketchup)
* 2 tbsp vegan Worcestershire sauce
* 1 tbsp yellow mustard
* 2 tsp liquid smoke
* 4 large burrito size tortilla shells (use gluten free if needed)
* 1 cup vegan cheese
* 1 large tomato
* lettuce
* 1 handful pickles
Instructions
* Add oil to a skillet over medium high heat.
* Add onions in and spread to an even layer. Let cook for 1-2 minutes or until they develop a nice color on them. Then stir and repeat, careful not to actually burn them but just get a nice color on them.
* Drop the heat down to medium and add in garlic. Stir around.
* Add in meatless crumbles. Let cook for 3 minutes.
* Add in black pepper and stir around.
* Add in ketchup, yellow mustard, vegan Worcestershire sauce, and liquid smoke. Stir together and let cook for another 3-5 more minutes or until the mixture has cooked throughout and then take it off the heat.
* Lay out a flour tortilla. On the bottom 1/3 of the tortilla, add 1/4 cup cheese and then a few sliced and halved tomatoes, a small amount of lettuce and a few pickles.
*or whatever toppings you are using— I used avocado too
*to make the cheese more melty, warm first in microwave and then spread.
* Add 1/4 of the meatless mixture on top.
*These make 4 very large wraps. However, you could make 8 smaller wraps if desired.
Pumpkin Pie Spice smoothie!

Ingredients:
•1 frozen banana
•2 majool dates
•1/4 cup of pumpkin purée
•3/4th tsp pumpkin pie spice or cinnamon
•1 cup of plant milk
•(optional) 1/4 cup of silk ultra protein milk
Throw into a blender and enjoy chilled! 😮💨

Ingredients
* 2 cups vegetable broth
* 3/4 teaspoon onion powder
* 3 tablespoons nutritional yeast
* 1 tablespoon soy sauce (or use tamari for gluten free)
* 1/2 teaspoon dijon mustard
* 1/4 cup all purpose flour (or use brown rice flour for gluten free
Instructions
* Add all ingredients to a medium sized pot and bring to a boil.
* Whisk over medium-high heat for a couple of minutes, until the gravy thickens.
* Serve with mashed potatoes! This gravy keeps well for up to a week in the fridge. Just re-warm, add a little water if too thick, stir and serve
For the instant mashed potatoes, I followed the instructions on the back and replaced the plant butter 🧈 and oat milk 🌾 Super easy and delicious! ❤️
I’ve really been craving hollandaise sauce since we first went vegan a year ago.
Hollandaise was one of my favorite and most frequently made sauces I’d batch up before I switched over to plant based eating.

* 1 cup vegan mayonnaise
* 3 tablespoons vegan butter
* 1 teaspoon lemon juice
* 1 teaspoon cayenne pepper (the recipe calls for a pepper sauce but I used ground)
* 1/2 teaspoon ground turmeric
* 1/4 teaspoon ground black pepper
1.: To a small saucepan over medium heat, add all ingredients.
2.: Cook, stirring frequently until heated through; do not boil.

I worked for Thai Kun in 2019 and fell in love with their food. I worked ACL 2019 for east side king and have been craving their Brussel sprout salad ever since. This time I got it over liberty rice, along with beet home fries and tofu kachi. All vegan of course, and so yummy.

One of my favorite soups has always been tomato, and this quick, creamy recipe does not disappoint. Eat y(our) medicine! 😋🍅🥣🌱
* 1 can of Campbell’s tomato soup (I get the heart healthy one)
* 1 full can of oat milk or any plant milk (just reuse the soup can)
* 1/2 tablespoon nutritional yeast
* Salt & pepper to taste
* 1/2 tablespoon of cashew sour cream (optional)
Heat everything on the stove for 3-4 mins or until hot. Serve and enjoy! 🌱
