Blueberry Biscuits
Ingredients

BISCUITS: 2 cups Flour
4 teaspoons baking powder
1 cup milk, cold
1/3 cup sugar
5 tablespoons of butter (cold or frozen)
1 teaspoon salt
3 ounces blueberries, fresh or dried

GLAZE: 1 cup powdered sugar
1/8 cup water
1 teaspoon vanilla
1/2 teaspoon lemon juice

Directions
Preheat oven to 450°F. Mix salt, sugar, flour, and baking powder in a bowl. Add the super cold milk into dry ingredients and mix. As dough begins to form take each tablespoon of hardened solidified butter and break chunks off and spread evenly over dough. Fold dough, and knead, repeat until all butter is spread in chunks evenly throughout dough. Carefully fold in the blueberries. Move dough to floured cutting board and roll flat to about ¼ - ½ thick (or to desired thickness) and cut approximately 6 Blueberry Biscuits with a biscuit or cookie cutter. If you notice the butter starts to melt (hot kitchen) during this process it may be necessary to return the dough to the freezer for 10-15 minutes. Do not exceed 20, as the baking powder’s 1st stage may become inactive past that. Place in oven and bake for about 7-12 minutes. Melt 1 tablespoon of low-fat butter in the microwave, and paint finished biscuits with a pastry brush. Mix glaze ingredients in a bowl, and drizzle over Blueberry Biscuits with a fork.

OK! WARNING! If you haven't made these yet, just letting you know they are highly addictive, make them, eat 1, stash another one for the next day, take to neighbors or co workers!!!! They are THAT good!!

Cheesecake Crescent Rolls~YUM
2 cans of Pillsbury Crescent rolls
2 8oz packages cream cheese, softened
1 1/2 tsp vanilla
1/4 cup butter, melted
Cinnamon
Sugar
Unroll and spread 1 of the cans of crescent rolls on the bottom of a 9 x 13 baking dish (or 8 x 8 if you want to cut the recipe in half). Combine softened cream cheese, 1 cup sugar, and vanilla. Spread over crescent roll layer. Unroll and layer remaining crescent rolls over cream cheese layer. Melt your butter and spread over top of crescent rolls. Sprinkle generously with cinnamon and sugar. Bake for 20-30 minutes in 350F oven until bubbly and slightly browned. Drizzle with a little honey if you like. Let cool a bit, slice and eat.

Pumpkin Cream Cheese Muffins

Ingredients
1 (8 ounce) package cream cheese
1 egg
1 teaspoon vanilla extract
3 tablespoons brown sugar
4 ½ tablespoons all-purpose flour
5 tablespoons white sugar
¾ teaspoon ground cinnamon
3 tablespoons butter
3 tablespoons chopped pecans
2 ½ cups all-purpose flour
2 cups white sugar
2 teaspoons baking powder
2 teaspoons ground cinnamon
½ teaspoon salt
2 large eggs eggs
1 ⅓ cups canned pumpkin
⅓ cup olive oil
2 teaspoons vanilla extract

Directions
Preheat oven to 375 degrees F (190 degrees C). Grease and flour 18 muffin cups, or use paper liners.
To make the filling: In a medium bowl, beat cream cheese until soft. Add egg, vanilla and brown sugar. Beat until smooth, then set aside.

For the streusel topping: In a medium bowl, mix flour, sugar, cinnamon and pecans. Add butter and cut it in with a fork until crumbly. Set aside.

For the muffin batter: In a large bowl, sift together flour, sugar, baking powder, cinnamon and salt. Make a well in the center of flour mixture and add eggs, pumpkin, olive oil and vanilla. Beat together until smooth.

Place pumpkin mixture in muffin cups about 1/2 full. Then add one tablespoon of the cream cheese mixture right in the middle of the batter. Try to keep cream cheese from touching the paper cup. Sprinkle on the streusel topping.
Bake at 375 degrees F (195 degrees C) for 20 to 25 minutes.

Dirt Cheap Beef & Rice Casserole-
You'll need:
1 lb ground beef
1-1/2 cups Mexican-style four-cheese shredded blend
1 pkg taco seasoning mix
1 cup rice
1 cup frozen mixed vegetables
14.5-oz can diced tomatoes
1 cup thick and chunky salsa
1 cup chicken broth

🍴Directions : ⤵️⤵️⤵️

Brown meat in large non-stick skillet. Drain. Return meat to skillet.

Reserve 1 cup cheese for later use. Add remaining cheese and all remaining ingredients to meat. Mix well.

Spoon into 13×9 baking dish sprayed with cooking spray. Cover.

Bake 40 to 50 min or until rice is tender. Top with reserved cheese. Bake, uncovered, 5 min or until melted. Serves 8

Hearty Crock Pot Cowboy Soup 🤠

Ingredients
2 Lbs Ground beef
4 Yukon Gold Potatoes
2 Cans Mixed vegetables undrained
1 Can Sweet corn undrained
1 Can Condensed tomato soup
1 Can diced tomatoes
1 Can Cut green beans undrained
Pinch Salt
Dash Pepper
2 Tablespoons Sugar

Instructions
Peel potatoes and cut into small cubes. Brown and drain ground beef. Place beef and potatoes in large slow cooker.
Add all cans of vegetables, can of tomato soup, and diced tomatoes. Salt and pepper to taste.

Finally, add the secret ingredient that sets this apart from your average soup- sugar!! Mix together well and cook on low for 2-3 hours in slow cooker.

Recipe Notes
Of course you can substitute fresh or frozen veggies, but would need to add a can or two of beef stock to this. No need to add this if using canned veggies, as you will be adding the cans undrained-which provides both liquid and flavor. 😋

Gluten Free recipes can always be substituted even vegan too
❤ Crock Pot Bow tie Casserole

1 1/2 lbs. lean ground beef
1 onion, chopped
1 clove garlic, minced
1 (15 oz.) can tomato sauce
1 (15 o) can stewed tomatoes
1 tsp. oregano
1 tsp. Italian seasoning
salt/pepper
10 oz. frozen spinach, thawed (can also use fresh spinach)
16 oz. bow tie pasta, cooked
1/2 cup parmesan cheese, shredded
1 1/2 cup mozzarella, shredded

Directions
Brown ground beef with onion and garlic. Put in crock-pot and add sauce, tomatoes and seasonings. Cook for 6-7 hours on low. Add the last 4 ingredients during the last 30 minutes of cooking and turn crock-pot to high. Add fresh spinach, pasta, parmesan and 1 cup of the mozzarella and mix well. Add the last 1/2 cup of mozzarella to melt on the top.

Instead of pouring out the leftover coffee from your morning pot, let it cool to room temperature, then pour any leftover coffee into your ice cube trays. Then, fill a glass with coffee ice cubes and add almond milk or coconut milk for an iced latte

General Tso’s Chicken ,Shrimp with mushrooms and onions

Baked Ravioli 😋

1 25 oz. (1 lb) frozen cheese ravioli
1 24 oz. jar marinara or spaghetti sauce
1 1lb. ground beef
1 tsp. dried basil
1 T. minced garlic
1/2 tsp. dried parsley
8 oz. shredded mozzarella cheese
1/4 C. parmesan cheese
Brown ground beef and drain, add in 1 C. of the pasta sauce, garlic and basil. Remove from heat and set aside. Bring a large pot of water to a boil and cook ravioli according to pkg. directions. Drain and return to pot and add in remaining pasta sauce. Stir to combine. Spray a casserole dish with cooking spray and layer 1/2 of the ravioli in the bottom. Top with all the beef mixture and spread around. Top with 1/2 of the mozzarella cheese and 1/2 of the parmesan cheese. Layer the remaining ravioli on top and top with remaining cheeses. Sprinkle with parsley. Bake at 350 degrees for 20 minutes, turn on the broiler and broil for 2 minutes or until top is browned somewhat.

SMOTHERED CHICKEN

FOR THE CREAMED SPINACH:
1 large bag of spinach leaves
4 ounces cream cheese...
1/4 C shredded parmesan cheese
2 cloves garlic, minced
3 T red onion, minced
2 T olive oil
Salt and pepper to taste

FOR THE SAUTEED MUSHROOMS:
8 ounce package of mushrooms, sliced
1/2 stick butter
2 T olive oil
1/2 C white wine
2 cloves garlic, minced
Salt and pepper to taste

FOR THE CHICKEN:
4-5 boneless chicken breasts
8-10 slices Mozzarella cheese, cut into 1/8 inch slices
1 T garlic powder
1 T seasoned salt, like Lawry's
1 teaspoon pepper

Preheat the oven to 350 degrees. Sprinkle the garlic powder, seasoned salt, and pepper on both sides of the chicken. Bake for 16 minutes.

Meanwhile, make the creamed spinach. Over medium-high heat, melt 2 T olive oil in a skillet. Add in the onions and saute 2-3 minutes. Add in the spinach and garlic. It will shrink ridiculously. When it's cooked through, stir in the cream cheese and parmesan cheese. Continue cooking and stirring until the cream cheese is melted. Remove from heat.

For the mushrooms, melt butter and 2 T olive oil in a skillet. Put the mushrooms in and cook until browned all over. Don't season with salt until they are browned or they will never brown. Deglaze the pan with the wine. Add in the garlic and season with salt and pepper. Cook until most of the wine is cooked out.

Flip the chicken pieces over. Divide the spinach and mushrooms over the top of each breast. Lay two slices of cheese over each piece of chicken. Cook another 12-14 minutes or until cheese is browned and chicken is done.

Lemon Lovers Alert!!

🍋🍋LEMON LUSH DESSERT 🍋🍋

Ingredients
For the Crust:
1 cup butter, softened but not to room temperature
2 cups flour
1/4 cup sugar
1/2 cup pecans, chopped in small pieces

For the Cream Cheese Layer:
2 (8 oz) packages Philadelphia cream cheese
1 cup powdered sugar

For the Pudding Layer and Topping:
2 small packages Jell-O instant lemon pudding mix
3 cups cold milk
3 – 4 drops lemon extract or 1 tbsp lemon juice – optional
1 (16 oz) container Cool Whip, almost totally thawed
Lemon zest, to garnish (optional)

Directions
Stir together butter, flour, sugar, and chopped pecans in a mixing bowl. A fork works really well to get everything mixed together.
Press into a 9×13 baking dish and bake 15-20 minutes at 350°, or until a light golden brown. Remove from oven and set aside to cool.

Beat together cream cheese and sugar until creamy and smooth. Spread over cooled crust.

In another mixing bowl, whisk together pudding mix and milk.
Then whisk in the lemon extract or lemon juice if using. Allow to sit for 5 minutes to thicken up a little. Spread on top of the cream cheese layer. Cover and place in the fridge for 4 – 6 hours. May be refrigerated overnight.

When ready to serve, spread whipped topping over the pudding layer. Cut into 18-24 pieces (depending on how large or small you want them) and garnish with fresh lemon zest.

Paula Deen Crock Pot Macaroni and Cheese

Ingredients
2 cups uncooked elbow macaroni
4 tablespoons butter
2 1/2 cups grated sharp cheddar cheese
3 eggs ( I omitted the eggs)
1/2 cup sour cream
1 (10 3/4 ounce) cans condensed cheddar cheese soup
1/2 teaspoon salt
1 cup whole milk
1/2 teaspoon dry mustard
1/2 teaspoon black pepper
Directions
Boil the macaroni in water for six minutes. Drain.
In a medium saucepan, mix butter and cheese. Stir until the cheese melts.
In slow cooker, combine cheese mixture and add the eggs (I omitted the eggs), sour cream, soup, salt, milk, mustard and pepper. Add the drained macaroni and stir again.
Cook on low for 2 1/2 hours, stirring occasionally.

Potato Soup

Ingredients
1 lb bacon, chopped
2 celery ribs, diced
1 onion, diced
4 garlic cloves, minced fine
6 -8 potatoes, peeled and cubed
32 ounces chicken broth
3 tablespoons butter
1/4 cup flour
1 cup heavy cream
salt and pepper, to taste
2 cups sharp cheddar cheese, shredded
2 green onions, thinly sliced

Directions
Place bacon in a large soup pot or dutch oven and cook until crisp. Drain off all but 1/4 cup of grease.
Add celery, onion and garlic to bacon grease and cook until just softened. Be careful not to burn garlic. Add potatoes and toss in grease to coat.
Add chicken broth. Bring to a boil, then simmer until potatoes are tender, stirring occasionally.
Place butter in a small saucepan over medium heat. When melted, whisk in flour. Brown mixture, stirring constantly, for approximately 2 minutes. Add heavy cream slowly, while whisking constantly. Bring to a boil, then reduce heat and continue whisking until mixture thickens.
Stir cream mixture into the potato mixture. Gently stir in cheddar cheese and reserved bacon. Add salt and pepper to taste.
Garnish with green onion and additional cheese, if desired.😊

🍲CABBAGE ROLL SOUP🍲

4 cups beef broth
8 ounce can tomato sauce
1/2 cup uncooked long-grain rice
1 bay leaf
3 tsp brown sugar
2 tsp parsley
2 small spoon olive oil
A pinch of salt & pepper 1 pound ground beef
1 onion diced
2 tsp small garlic
4 cups chopped green cabbage
2 carrots sliced

In a large pot , heat the olive oil and add the ground beef and season with ppeper and salt . Cooked ,divided the meat with a spatula until beef is browned, about 6 min . Add the garlic and onion cook about 4 min

Add in the pot the carrots/cabbage/beef broth/rice/tomato sauce/bay leaf /and sugar ; and add salt/pepper . Bring and cook about 26 min until rice .
Serve & enjoy !

🧅🌶🍲Jambalaya🍲🌶🧅

2 tablespoons extra virgin olive oil
1 1⁄2 lbs boneless skinless chicken thighs
1 lb andouille sausage, cut into 1/4 inch slices
1 large onion, chopped
2 celery ribs, diced
1⁄2green bell pepper, diced
1⁄2red bell pepper, diced
1⁄2 teaspoon dried thyme
1⁄4 teaspoon dried oregano
1⁄4 teaspoon sweet paprika
1⁄2 teaspoon salt
1⁄4-1⁄2 teaspoon cayenne pepper (optional)
1 1⁄2 cups long grain rice
1 (14 ounce) can tomatoes, chopped,with juice
2 cups chicken broth or 2 cups stock
8 ounces medium shrimp, peeled and deveined
2 tablespoons chopped fresh parsley
3 green onions, finely chopped

Preheat oven to 350 degrees F.
In a large pan or Dutch oven, brown chicken in hot oil on both sides; remove and drain.
Add andouille, onion, celery, bell pepper, thyme, oregano, paprika, salt, and cayenne pepper to the pan, cooking and stirring for about 5 minutes until onions are tender.
Add rice, tomatoes with juice, and broth; bring to a boil.
Place rice mixture in a baking dish or oven-proof casserole; top with chicken; cover (can use foil) and bake at 350 degrees F for 40-45 minutes or until rice and chicken are done and tender.
Stir in shrimp, parsley, and green onions; cover and cook 5-8 minutes longer or until shrimp curl and turn bright pink and serve.

I love a good taco just like anyone else...

BUT
Those store-bought taco seasonings are a hidden source of sugars, fillers and additives! (No Bueno)😕

Here's a quick recipe to make you own preservative free taco seasoning for easy access, quick meal prep and a fraction of the cost. If you really want to "Level Up" how about substituting a butter lettuce or romaine leaf for the shell? (Adios carbs 💥)

Ingredients:

• 2 T chili powder

• 1/2 tsp garlic powder

• 1/2 tsp onion powder

• 1/2 tsp crushed red pepper flakes

• 1/2 tsp dried oregano

• 1 tsp paprika

• 3 tsp ground cumin

• 2 tsp sea salt

• 2 tsp ground black pepper

Instructions:

1) In a small mixing bowl, whisk all ingredients until combined well.

2) Store in an airtight container.

For use in recipes, start with a smaller portion and taste test to decide the appropriate spice level for yourself/family.

🍓🥑🥗Strawberry Avocado Kale Salad with Bacon Poppy 🥗🥑🍓seed Dressing

A little twist of the original strawberry salad recipe gets you a kicked up amazing new version of the salad everyone loves! Try not to love this salad! I dare you!

INGREDIENTS:
6 cups baby kale {prewashed kind}
2 cups sliced strawberries
1 ripe avocado, sliced
for the dressing-
4 slices bacon
1/2 cup mayonnaise
2 tablespoons stevia
2 tablespoons white vinegar
1/2 teaspoon poppy seeds
salt & pepper, to taste

DIRECTIONS:
Place kale, strawberries and avocado into a large bowl and set aside.
For the dressing, cook bacon until crisp. Remove from pan and drain bacon on paper towels. Crumble into small pieces and whisk together with remaining ingredients. Drizzle over salad and serve

yield: 2 SERVINGS prep time: 5 MINUTES cook time: 10 MINUTES total time: 15 MINUTES

🌽🥑🍅🥒Corn Tomato Avocado Salad 🥒🍅🥑🌽

INGREDIENTS

corn kernels from 1 large steamed corn on the cobb, 1 cup

5 ounces diced avocado, from 1 medium

1 1/2 cup diced Persian cucumbers, about 3 small

1 cup halved cherry tomatoes

2 tablespoons diced red onion

2 teaspoons extra virgin olive oil

2 tablespoon fresh lemon juice, from 1 medium lemon

1/4 teaspoon kosher salt

fresh black pepper, to taste

INSTRUCTIONS

Toss all ingredients together and serve immediately. Enjoy!

Combine softened butter, garlic bread seasoning, and 1 Tbsp grated parmesan. Unroll breadsticks and separate them into individual breadsticks. Spread garlic butter over each breadstick. Roll up and place it into a muffin pan. Sprinkle each breadstick with some shredded or grated parmesan.armesan.parmesan.rmesan.san.esan.mesan..

1 Tbsp grated parmesan cheese

Preheat oven to 400.
Lightly spray a 12-cup muffin pan with cooking spray.
