Definitely not the most picturesque dish, but delicious nonetheless! Using only the ingredients in my refrigerator and pantry, I wanted to make something to celebrate warmer weather, and this chick pea salad with cucumbers, red onion, carrots, dairy free feta cheese and greek dressing hit the spot. What do you have on hand that might make a yummy meal or side dish? π€π₯¬
It's Blue Cheese Dressing and it's VEGAN!ππ Growing up this was a staple in our fridge, so I knew I had to create a plant-based version and this one is amazing! We love it with salads, veggie burgers, beans & greens, Buffalo Cauliflower Bites, and more!
Ingredients:
2 tablespoons raw cashews
4 ounces extra-firm tofu
1 clove garlic, peeled
3 tablespoons lemon juice
3 tablespoons apple cider vinegar
2 tablespoons tahini
1 tablespoon water
2 teaspoons maple syrup
1 1/2 teaspoons Dijon mustard
3/4 teaspoon white vinegar
1/2 teaspoon sea salt
Toppings:
2 tablespoons finely chopped green onions or fresh parsley
ΒΌ cup crumbled extra firm tofu
Directions:
Place all the ingredients (except the toppings) into a high-powered blender and blend until smooth. Fold in the dried chives and crumbled tofu. Store in an airtight container in the refrigerator for up to a week.
As Spring approaches, my cravings also shift gears and I start craving my childhood favorites...BBQ anything, salads and fresh produce π₯¬π½ππ
Today's craving was pasta salad and I wanted to make sure I satisfied that craving by making it as close to the original as possible. In my house growing up, that meant elbow pasta, onions, cucumbers, lots of mayo, a squeeze of mustard, and salt & pepper. On certain occasions, my mom would add canned tuna! π
I only made a few small changes making this gorgeous, colorful bowl of deliciousness. The first was to swap refined white pasta with a pasta made from veggies (why not add more vegetables, right? ). The second was to swap out the regular mayo for plant-based mayo (again, why not remove TONS of fat and calories? π€·ββοΈπ). The last thing I did was to add a veg or two that wasn't in the original lineup (see where I'm going with the MORE VEG theme on this one? )
What I ended up with will absolutely scratch that itch for Spring BBQ foods and the nutritional difference is BONKERS! π
