Perhaps I am slow on the uptake and behind on trends . . . . But I just discovered that I can make Dulce de Leche in my Instantpot 🤯

My mom used to make these delicious Corn Fritters and they have always been a family favorite and one I passed down to my son. My momma used to make a HUGE batch of these for the family and we would munch on the cold fritters throughout the day. Yummy when eaten plain, but we always ate them with honey & butter. You can also sprinkle with powdered sugar if you like, as well. These gems are soft little pillows of goodness! Of course, you must fry these at the exact right temperature so that they do not absorb any oil, because if you don't they are like a sponge, but when fried correctly they are not oily at all. These really bring back memories,for me, of family at my childhood home and of my Momma's fantastic cooking! It was her gift and I am happy to be able to have received that gift so that I can share it with those around me. She inspires me every day♥️

Who loves old fashioned ginger cookies? Buttery, crispy on the outside, yet chewy in the middle. Full of delicious molasses, cinnamon, cloves, ginger, and nutmeg. Rolled in granulated sugar and baked to perfection. The smell in the air cannot be beat and truly brings back fond memories of my mother baking her holiday delights! So delicious!

Although my biz is on hold . . . . I still bake at home :) Last week I made a bar for my work - we had a bake-off, although I didn't actually bake. I came in 3rd place, and I had never made this recipe before! Snicker Crunch Bars . . . the results were good - a lot sweeter than I like, but I already have modifications in mind. Always make a recipe as is for a tester and customize after to your taste! These were 4 layers and a little went a long way!

Yep! It's a thing . . . Coconut Day :) Do you like Coconut? If so, what are your favorite Coconut Filled goodies? Mine are Almond Joy candy bar, White Coconut Fudge (my Momma's recipe), and Rice Krispy Cookies (another of my Momma's recipes). I did recently try a coconut stuffed brownie recipe and those were a winner, too. Funny thing, though, is I cannot stand Pina Colada anything 🤷‍♀️
