1 package crumbled tempeh sautΓ©ed with onion & garlic, cooked riced, 1 small can hatch chili peppers, 1 can fire roasted tomatoes, chili powder, cumin, and salt. Baked at 425 for about 20-30mins. Soo good!! ππ»

Kale with tahini dressing (tahini, lemon juice, water, and salt), cucumber salad, broccoli, roasted potatoes & peppers, and h**p seed breaded and baked tofu.

Packing your own lunch is one of the easiest ways to save calories and $$$. It just takes a few minutes of prep the night before. This only took about 5 minutes to put together: Kale salad massaged with extra virgin olive oil, lemon juice, and salt with a tahini dressing, h**p seeds, tomatoes, and canned chickpeas. And sliced watermelon on the side. ππ» π±

Ok, so this crispy baked tofu was delicious! I ran out of panko halfway through so I coated the rest in h**p seeds which was actually even better!!ππ»

I always use βso much smoother than any other brand Iβve tried which makes a huge difference in taste! π±
Choosing nutrient dense foods over calorie dense foods is one of the simplest strategies to eat healthier and lose weight without starving yourself.
Think about how your body would feel after eating 5 cups of strawberries vs 2 tbsp of oil.. Probably pretty full compared to a negligible effect with the oil. Why is this? The strawberries are also packed with vitamins, minerals, fiber, and water to fill you up while the oil lacks any nutritional benefits.
Same idea for a lunch with a large salad, fresh veggies, chickpeas, and a vinegar based dressing compared to a frozen coffee drink. The coffee is going to have way more calories and leave you still feeling hungry!
Keep this simple trick in mind to eat healthier and never be hungry!

I love traveling, but it is crazy to me how difficult it still is to find healthy plant-based options most places. Even though my planning ahead and bringing my own food helped a ton, I still found myself eating fried vegan food as my only option more than once this past week. So happy to get home to find all these fresh veggies growing in the garden. Now back to cooking!!! π± π π₯

Okay, so Iβll admitβ I went a little crazy with the garden this year! Itβs like a jungle, but I absolutely love it! There is just something so incredibly special about enjoying fresh-picked fruits and veggies with my kids. What did you grow in your garden this year?? ππ±ππ±π
A complete protein source is a food that contains sufficient amounts of all nine essential amino acids needed in the human diet.
While there are several plant-based complete protein sources such as quinoa, tempeh, and sprouted grain bread, you can also get all 9 essential amino acids by combining certain food groups.
Some examples:
π± hummus on whole grain toast
π± black bean and brown rice burrito
π± oatmeal topped with walnuts
The possibilities are endless!

I also love topping my salads with toasted raw almonds for extra protein and a great crunch! Just heat a handful in a non stick pan on medium heat until fragrant and starting to lightly brown, stirring frequently and being careful not to burn! ππ» π

Delicious summer meal: baked breaded eggplant, tahini pasta salad, and garden fresh greens. π₯¬ π
For the eggplant breading I use a mix of nutritional yeast, ground flaxseed, stone ground cornmeal, garlic powder, and Italian herbs. So flavorful and a so much healthier alternative to white bread crumbs! Lightly spray with olive oil and bake at 400 for 20-30 mins, flipping halfway through.
Most oils are highly processed and calorie dense, so I try to limit them in my diet whenever possible. There are several plant-based options to replace the oil from your favorite muffin or other baked good recipe! My personal favorites are mashed ripe banana and unsweetened applesauce. Give it a try!
