Meet Valencay! This cheese is a classic French goat cheese, ripened with ash. The particular batch I received is SUPER fresh with a very creamy and velvety texture. It becomes firmer with age.

Legend has it, it used to be shaped like a perfect pyramid until Napoleon returned from his disastrous military campaign in Egypt. The shape angered him so much that he sliced the point off with his sword 🗡️ giving you the shape we see today!
