Good Wednesday afternoon 🙏🫶
I have been pressure canning 3 pork butts the past 2 days. I cut the bone out and cut as much of the fat off as I can, then cut into chunks; very time consuming because pork butts are very fatty. I seasoned each one differently, then begin the raw packing process.
When processing meat, you must be perfect about sterilizing, packing, and TIME! 75 minutes for pints, and 90 for quarts.
Canning meat is not sexy, but, man oh man, it is thankfully way better than it looks!😁 lol the seasonings get absorbed into the meat and it own juices, it is tender, and ready to eat right out of the jar!
By the time I am done, the 3 pork butts will have provided our home with 18 pints of ready to go food. We are having bbq pork butt sandwiches tonight! Basically, homemade sloppy joes. Lol

I was gifted fresh horseradish right from the ground Sunday by a truly wonderful couple. This morning I made fresh horseradish, and it is DELICIOUS! I even have enough to start my own horseradish. These are the gifts I love, food that we can keep growing. Speaking of growing, I thank our Heavenly Father for this rain!! Our garden needed it desperately. 🙏🫶

We went to look at climate control spaces at the Flea Market Sunday. We have discovered that at this time, due to our being from Bristol, VA, we have a whole mess of hoops to jump through to sell our goods in Tennessee. If we actually lived in Bristol, Tennessee, we would not have an issue. So no more Tri Cities Flea Market until we get this figured out. I am still taking orders though.
In the mean time, here is what was for supper this evening. Chicken enchiladas, with homemade enchilada sauce of course. Lol!

Unfortunately, due to the near 100 degree temperature and high humidity predicted, we will not be at the Flea Market Saturday. We have been meeting/delivering with folks placing orders. Remember, it is bbq/family get together time. Let me make your salads, desserts, breads, deviled eggs, etc...just sit back and enjoy yourself.

First, the results of my 1 week counter black raspberry syrup. It is not supper sweet, as usual, I did not want to add a ton of sugar. I think I could have added a little more. Lol. I made my, as Daniel calls it, "weeds sun tea". Lol, I added lavender, lemon balm, bee balm, & mint with the tea bags. The "syrup" added a freshness too the tea.
I have everything restocked, it has been a very busy week, which I am grateful for, so, I thank all of you for that!🫶
All orders are filled. My apple butter, pineapple cowboy candy, watermelon rinds, & mustard eggs were very popular! Thank you for your orders🫶
I look forward to seeing you all at the tri cities flea market Saturday. I am unsure were we will be, either under the covered sections, or, the outside, outback. I will send an update tomorrow when we know. Enjoy your Friday! 🫶🫶

I wanted to share a delicious sounding baking idea from I believe was the Mckenna family. Mrs. McKenna takes my, Kosher Dill Pickled Brussel Sprouts with parmesan cheese, puts them in the oven. Her hubby passed this on to me when he stopped by my booth last Saturday. I thought it sounded amazing! Hopefully she will post her recipe in the comments section for us all to enjoy. 🙏😁
I am also posting the progress of the black raspberry syrup that sits on the counter for a week. It looks delicious.

I wanted to share an experiment with you all. This is a no cooking black raspberry syrup. This recipe is on YouTube. It has 3 ingredients : black raspberries, sugar, & thinly sliced Lemons.
You put it all together like you see in my picture. Let it sit in a cool, shaded spot in your kitchen for a week. I will take a picture next Tuesday, and Friday when it is done. It ends up looking more like something you add to your tea, or maybe some icecream. I am very excited to see how it turns out.
NOTE! I would only be able to sell this as a special order. This could never be something I would have sitting out on my table for sale due to it not being sealed. I would gladly make it the day before pickup.

The jam I made Wednesday,(the jars in the picture) have very few seeds in it. I milled them by hand, and let me tell you, these little berries have A LOT of seeds! Lol.

I made sure to get more Pineapple Cowboy Candy made. I sold out of that so fast, and had orders for it just from the samples I had left over. I did make a dip out of it. Still need to play with the recipe a bit, but, it was really good.

I have been busy! First, my something new is....PINEAPPLE COWBOY CANDY!! Sweet with some heat. I can't liken the flavor to anything, so come get a sample and tell me what you think. To me, it is begging to be turned into a dip for fruit and vegetables, for me, mostly a fruit dip.
I have replenished the Kosher dill green beans, (Dilly beans) and brussel sprouts. I also have made: blueberry, triple berry, blackberry, and my peach & habanero jams! I have milled some of the seeds out of the blackberry and a batch of the triple berry jams. I do have a regular batch of the triple berry with full seeds for those that love it natural.
All special orders are ready for pick up tomorrow.
