Does anyone want a freshly baked bagels? I used a recipe for pretzels, but I just shaped them like bagels. So soft and perfect. Some with jalapeños, some with everything bagel seasoning and some just with sesame seeds. So good. We will have delicious breakfast sandwiches tomorrow morning 😋. Today was an easy and delicious dinner again 😋 - linguine with pea pesto. Yes, correct - pea pesto! Delicious, healthy, full of flavor. It is made with peas, basil, garlic, parmesan cheese and olive oil. It took only a few minutes to make it, and we all loved it, including my kids. So now I am obsessed with making macarons! Today, I made berry macarons with raspberry mousse cream. So good. The recipe I used was "Raspberry macarons" from Polish Cookidoo. But I made some changes. Instead of adding food coloring, I added strawberry and beet powder. Also, the raspberry mousse I made from my old recipe . And let me tell you, those macarons are DELICIOUS!

Before I had Thermomix, I'd never been thinking about making macarons because I had heard that they are not that easy to make. But with Thermomix, it is not difficult, believe me. And they are so much tastier and cheaper than those bought from the pastry shop.

School vacation week special breakfast - chocolate pancakes. So yummy and quick to make. Recipe from Polish cookidoo.

For many years I was intimidated by macarons cookies, but today, I made them for the first but definitely not the last time. Do they look perfectly? Definitely not, but they are delicious and gluten-free. And next time I will know how to shape them better. The recipe I used is from Cookidoo: " Pumpkin spice macarons with orange mascarpone cream". Today is Fat Thursday and, as a Polish tradition, we have to eat donuts 🍩. So there was no other choice 🙃 and I had to make it . If you have never had homemade donuts before, you definitely have to try them. They are so much better than a store bought.

It was a busy weekend:
Berry Granola - with freeze dried strawberries and raspberries, dried blueberries, mixed nuts, spiced with cinnamon, and sweetened with maple syrup.
Lemon shortbread cookies decorated with icing made with freeze-dried strawberry powder, powder coconut sugar, and lemon juice. Look at that color! It is delicious and much healthier than artificial food coloring.
And last but not least- Blueberry coffee cake, full of blueberries and nuts. Yummy!
