Mary LOVES winter squash, but also loves to save time. Below, learn a shortcut on how to make squash using the microwave first, then the oven.
How to microwave the squash first:
1. Wash outside of squash.
2. Use knife to slice holes into squash.
3. Place in microwave for ten minutes
4. Use towel to remove and allow to slightly cool.
5. Cut in half. Cut butternut long ways (hot dog cut) and spaghetti short ways (hamburger cut).
6. Remove the middle and seeds.
After microwaving with the above steps, how to bake butternut and acorn squash:
1. Preheat oven to 400 degrees.
2. Slice into 1/2 inch width and 1 inch length pieces.
3. Peel or cut off skin.
4. Place parchment paper on a pan.
5. Place squash on a pan and brush with marinade or season.
6. Bake for 20-30 minutes, depending on size.
After microwaving with the above steps, how to bake spaghetti squash:
1. Preheat oven to 400 degrees.
2. Spray inside halves with olive oil and then season.
3. Cover the pan with water and place halves face down.
4. Bake for 20-30 minutes, depending on size (until the back of the fork can push down on the skin).
5. Scoop squash out with a spoon.

✨ When picking an avocado, choose one that squeezes similar to an eraser. This is ripe and ready to eat.
✨To ripen quicker, place in a brown paper bag and check daily.
✨To prevent ripening before use, place avocado in a jar of water in the fridge.
✨To prepare it: Cut in half, use the side without the seed first. Leave seed in for longer freshness.
Did you know?
Placing the seeds in a prepared dish will lengthen the freshness of the dip.
The following products prevent browning: lime juice, lemon juice, or Fruit Fresh (ascorbic acid).
You can wrap up cut avocado with saran wrap to eliminate air exposure to prevent ripening.
The serving size is 1/4 of a medium avocado.
Avocados have 20 vitamins and minerals, are a good fiber source, and are a healthy fat source providing fullness and a creamy texture.
