Seasoned Parm Croutons.
Drizzle of Evoo, Grated parm, S&P, Onion & Garlic Powder, Italian Seasoning and some crushed Red Pepper Flakes. 🤤🤤🤤
Slowly preparing for lunch for the weekend.
They came out better than I thought they would, for my first time doing croutons by hand, not at work.
Repurposed some Mason jars to do fruit infused water, featuring strawberries, Blueberries and Grapes.
Fresh squeezed lemon juice, a splash of ACV, a little drizzle of honey, punch of cayenne, Crack of sea salt, and a pinch of turmeric and black pepper. 😊
Quick little salad set up I did the other night for lunch this weekend
Hannaford seasoned rotisserie chicken, further seasoned and tossed in BBQ. 1 was in a roasted garlic & Honey bbq, the other in Fireball BBQ.
Salad is Broccoli florets, Vidalia Onion, orange bell pepper, spring mix, shaved Carrot, and chopped plum tomato, topped with fresh grated Pecorino, Parmesan, and Provolone.

So went to collect these shirts for having hit some BS corporate goals, and my supervisor starts talking to me about my food truck aspects. I tell him I'm still trying to save some money to help cut some overhead/interest/better secure a loan, and we end up in a semi-long conversation about various things in that regard.
From vendors and local butchers, to who I'd have running the front if I was able to find someone(Which I can think of only 1 person I'd truly want there), surveys to help figure out product a bit better and a more solid consumer market, ad revenue, etc. 😲 20+mins of getting paid to talk Food/My business, I'll take it.
But definitely gotta figure out this targeted survey thing, as I can apparently pay like 10$ to survey a certain location about things...🤷♂️🤔
Will definitely be looking at more butchers, as atm I know of 2, both of which are a good 45mins from me atm.
Some has to wait until I have a better grasp on financial savings towards that end, as some of it now isn't going to be the same a year or 2 from now.

Some spaghetti with our homemade tomato sauce, and some fresh grated cheeses, and our Signature Cheesy Chicken Parm! 😍🤤

Dinners for the week.
Grilled Steelhead Trout, Grilled Salmon, Grilled Catfish, Grilled Cajun Catfish and tomorrow we'll be grilling up some chicken as well. Paired with Grilled Asparagus, Sauteed Spinach and Kale with Garlic, and Roasted Veggies.
Baked up some Sweet potatoes as well to complete the meals.
Roasted Veggies=Purple, Orange, and White Cauliflower, Broccoli, White and Baby Bella Mushrooms, Carrots, Onions, Brussel Sprouts and Chopped Garlic.

Grilled Fresh Salmon, Grilled Cajun Catfish, Grilled Asparagus, Sauteed Spinach & Kale w/ garlic, & Roasted Potatoes & Brussel Sprouts.
This is dinner for tonight-Friday.

Salmon Grilled up with a touch of olive oil, salt, pepper & butter.
Catfish Grilled up with a touch of Evoo & Butter.
Asparagus Grilled with a splash of Evoo, salt, and crushed red pepper flakes.
Roasted Potatoes & Sprouts tossed in Evoo, smoked paprika, salt, pepper, Italian seasoning, and parmesan, with chopped garlic.
Spinach & Kale sauteed in butter with garlic and a pinch of salt.
I think I over-adulted! 🤣
Kangaroo Bolognese with polenta tossed with Angel hair. Kangaroo definitely has a sharper/gamier taste than the other meats. First time whipping up polenta... that was a panicky adventure that turned out sooo much better than I would've guessed.
Definitely underestimated how much angel hair I'd end up with! 🤣

First use of the truffle oil, and our first attempt at/with a lettuce wrapped Burger. 🤞
The steak mix was so delicious, I forgot about the cheese. It melted enough though.
I always forget just how good stuff is when you make it at home. The flavorgasm is always a first, and its always a brand new experience, despite how long I've been cooking.😍❤️🔥🤤
Shaved ribeye(i think), a little butter and EVOO, sautéed Onions, Garlic, Bellas and Bell Pepper(red, orange, green). Sharp Cheddar and Provolone cheese, some seasonings and a splash of marsala wine. Light touch of mayo on the roll as it got grilled, and sooooooooo good!

Probably should've just done a bowl at that point, but, who doesn't love a Chipotle size burrito that you can't properly wrap and barely can bite.🤣🤤🌯

Tuna Melt Mac n Cheese.
Had a couple boxes of mac, and lots of leftover cheese as I forgot to bring it for the burgers yesterday, so we made the box Mac, added a few spices of Cheddar, and a few slices of Pepperjack, seasonings, butter and mayo(Its a semi decent substitute for milk, as I don't keep it on hand). Melt down, mix up, mix in tuna and voila!
Not the best or fanciest, but, great for a quick cheap meal 😊🤤
Gr**go Loco Nachos for lunch!
We have some tortilla chips spread out on the plate(important for topping coverage), layered with Shredded cheese(always the first topping), Melty Salsa con Queso, Seasoned Ground Turkey, More shredded cheese, Diced onions, fixed Tomatoes, Shredded Iceberg Lettuce, Mild Salsa, Guacamole Salsa, and Sour Cream.
All spread out for coverage across all chips!

Italian Wedding Soup courtesy of and is surprisingly delicious, which is great as it was about a 30min walk out there, and I couldn't leave without getting a 2nd bowl to take home.
The meatballs are my favorite, and they blend in and compliment the soup better than traditional meatballs. 🤤
Also for a "cup" of soup, that's a great portion, compared to the actual "cup"s of soup most places charge you the same or more for.
Wild Boar and Hot Italian Sausage & Peppers!
With some Pepper Jack Cheese, and Spinach added.
Ķaiser roll cuz that's what was left.
Ground Sausage is a game changer for Sausage and Pepper sandwiches!
If you haven't tried it, grab yourself some and do it up your favorite way. The sausage mixed with the peppers so much better, no sausage skin 🤮, and you can add any seasonings you want into it. You can also toss the meat and peppers in sauce, for much better sauce coverage than using whole sausages.

Had some fun making lunches/dinners for the weekend.
We've got Marinated Grilled Chicken over a bed of Butter & Garlic Sautéed Spinach and Kale.
Hand mashed butter/garlic potatoes, with a mixture of red, purple, sweet and gold potatoes.
And last but not least
Roasted Veggies consisting of Garlic, Onions, Peppers, Green Beans, Mushrooms, Rainbow Carrots, Broccoli, Cauliflower, and Asparagus.
Housemate was hungry so she got a plate.

I did better on this soup. It doesn't need the noodles, plenty of turkey, the extra veggies, broth is a flavor bomb, and looks like I managed to minimize the grease from the turkey and sautéed veggies much better this time. 🤤🤤🤤
Definitely bringing this to the restaurant tomorrow, let's see what more experienced cooks/chefs think. 😊

OMG The Moon is in my soup! 🤣
I wasn't feeling up to cooking noodles or the cleanup and precision that came with, but the stock was cooked up with Broccoli and Green Beans as well as the carrots, celery and onions and herbs. Definitely feel up to noodles now, but 🤷♂️
5hrs later, soup is ready! Loaded with all kinds of veggie goodness and plenty of turkey between the carcass and the stuff cut from it the other day.
