Hi all, pitboss @phillipfoss here! As proud as I am of our signature bone in short rib ‘EL Boxcar’, coming up with it was like hitting the jackpot on the roulette wheel. There was no real strategizing, it just landed where it was supposed to. As the competition in Chicago for St. Louis style ribs is steep, developing the perfect offering was more like surviving a Texas hold ‘em tournament with top pros. Emotionally racking, but I now feel pretty good about our chances at the final table. The fall off the bone meat is cured in a dry rub overnight and spends upwards of 6 hours smoking low and slow while being continuously basted with an intense smoked pork fat vinaigrette spiked with cayenne & coffee.
