Elida Estate ASD Geisha on V60 Brewer The Lamastus family name has become ubiquitous with the highest quality coffee in the world. Elida Estate coffees are produced under a unique ecological condition. The coffee is shade-grown and bird-friendly. The farm is located at a very high elevation in a microclimate with very low temperatures, the coffee trees are surrounded by the Volcan Baru National Park to produce an exceptional environment for coffee cultivation. This Geisha is processed using his own anaerobic slow dry (ASD) method. First, the coffee cherries are fermented in a sealed tank for five days, and then they are dried on raised beds for 45-60 days. This is a longer drying time than traditional naturals and results in a very complex cup with notes of tropical fruits and a sparkling acidity. Here’s our recipe: Water: 300G Coffee: 20G Grind: Medium Fine Brew Time: 4:00 Note: Adjust grind size until the total brew time reaches between 3:30 - 4:00 minutes.
