Blueberry Coconut Flour Pancakes! 🥞🫐🍌 Such a good stack - they’re soft and sweet, and not dry at all - not what you’d expect with coconut flour as the only flour used.

These pancakes are packed with protein, fiber and so much deliciousness! Made with our Organic Omega-3 eggs + a little protein powder to boost that protein content even more.

Here’s what you’ll need:

1 ripe banana
2 Organic Omega-3 eggs
2 tbsp natural peanut butter
2 tbsp unsweetened almond milk
1 tsp vanilla extract
1/4 cup coconut flour
2 tbsp vanilla protein powder
1/4 tsp baking soda
Coconut oil for cooking
Fresh blueberries

Mash the banana and combine it in a bowl with the eggs, peanut butter, almond milk, and vanilla. Add the coconut flour and baking soda and stir until combined. Heat a skillet over medium-low heat and add a little oil. Scoop about ⅓ cup of batter for each pancake and add blueberries on top. Let the pancakes cook for about 3 minutes, and when you see small bubbles and the edges beginning to look cooked, flip and cook for another 2-3 minutes. Makes 5-6 pancakes. Top with a drizzle of peanut butter and maple syrup + extra blueberries!

The Best Sweet and Savory Sandwich of Your Life

A cross between Indonesian and Hong Kong-style sweet and savory sandwich that uses eggs and tapioca as the base of this sandwich filled with crispy bacon, sweet potato, butter, and cashew/pecan coconut sugar.

Ingredients:

🥚 4 Chino Valley Ranchers organic egg yolks
🥚 2 Chino Valley Ranchers whole eggs
🥚 1 1/2 C tapioca flour
🥚 3 tbsps AP flour
🥚 4 1/2 tbsps coconut sugar
🥚 225ml coconut milk
🥚 1/8 tsp baking powder
🥚 1/4 tsp baking soda
🥚 1 1/4 tsp yeast
🥚 *1/8 tsp sea salt

Method: Add all ingredients above except baking soda. Let the batter rest for at least one hour. Preheat your oven 10 minutes before at 340F with an empty pan. After letting the batter rest for 1 hour, add baking soda and baking powder with 1 1/2 tbsps of water mixed. Coat pan with coconut oil. Bake at 340F for 20 minutes on the bottom of the oven with the door slightly open. For the next 10 minutes, broil at the highest temperature for 5-10 minutes on the top rack of the oven. While still hot, skim off the top layer to expose holes. Add butter and fillings. Cut in half and sandwich.

Tips for recipe success:

▪️ Place cashews and pecans in the freezer for at least 1 hour. This helps prevent it from turning into nut butter when blending.
▪️ Leave the oven door slightly open during the whole baking process.
▪️ If your oven is not even, you may have to rotate your pan every 5 minutes.
▪️ Strain the batter while pouring in the baking pan.
▪️ SKIM off foam resting on the top of the batter!
▪️ Heat your empty pan for 10 minutes before pouring martabak mixture into the pan.

😍 Rhubarb Streusel Muffins😍 The tart rhubarb pairs perfectly with the sweet and tender muffin. Don’t skip that streusel topping - makes them extra special!❗SAVE THIS ONE❗if you need an amazing gluten free + dairy free muffin recipe!

Here’s what you’ll need:

3 Organic Omega-3 eggs
¾ cup almond milk
½ cup unsweetened applesauce
3 tbsp avocado oil
2 tsp vanilla extract
1 cup oat flour
1 cup almond flour
6 tbsp coconut flour
⅔ cup natural cane sugar
2 tsp baking powder
1/2 tsp sea salt
1 cup fresh rhubarb diced

Streusel Ingredients:

2 tbsp coconut oil
4 tbsp rolled oats
2 tbsp oat flour
1 tbsp cinnamon
2 tbsp natural cane sugar

Preheat the oven to 350 degrees F. Either grease or line a 12-hole muffin tin with paper liners or silicone muffin liners. Mix the wet ingredients, then add the dry ingredients and fully mix. Stir in the diced rhubarb. With a spoon or ice cream scoop, divide the batter between the prepared muffin pans. In a small bowl combine the streusel ingredients with a fork or your fingers until you have small pieces of crumble. Distribute the crumb topping evenly among all the muffins.

Bake for 22-24 minutes. Test with a toothpick for doneness - you want a slightly moist toothpick, not gooey but not bone dry. The edges of the muffins should be light golden brown and they will spring back when you press it lightly.

Skip the pudding box mix and try making it at home! A good homemade vanilla pudding recipe is a simple joy that can be eaten as is, or turned into pies, parfaits, and more!

Let’s make it 👇👇

Gather:

🥚 ¾ cup white sugar
🥚 3 tbsp cornstarch
🥚 3 cups whole milk (or half and half)
🥚 4 Organic Omega-3 egg yolks
🥚 1 tbsp unsalted butter
🥚 1 tsp vanilla extract
🥚 ¼ tsp sea salt

3️⃣ Next, slowly whisk the tempered eggs back into the saucepan with the hot milk. Whisk constantly.
4️⃣ Place the pan back on a medium heat stove and bring to a gentle boil. Whisk while heating and allow the pudding to fully thicken.
5️⃣ Remove from the heat and stir in the butter, vanilla, and salt.
6️⃣ Pour the pudding into a large bowl or individual containers and place plastic wrap on the top surface so that it is touching the pudding. Cool at room temperature for 1 hour, then place in the fridge to fully cool for 3-4 hours, or overnight.
