The Butcher's Galley is a foodie's dream... 🤍🖤🤍🖤

1) Hot B Smashburger: fried jalapeño, avocado, pepper jack cheese, jalapeño aioli, and bacon with no bun

2) Tacos: pulled beef ribs, pickled Asian veggies, fresh jalapeño, cilantro, and chili oil

3) Loaded Fries: BBQ pulled pork, coleslaw, fried onions, chopped pickles

4) Ohio Beef Short Rib Stew with toasted baguette

5) PB white chocolate cheesecake

All of these are 10/10 outstanding!...they will literally blow you away 😍

When you want a bacon jam and Swiss hotdog, but you don't want a bun...you opt for hand-cut fries fried in beef tallow 😍😍

INSANITY!!

This bacon jam is an absolute labor of love. If only you knew the time and effort that chef Ashley put into it! Everything in this dish is made in house and it is definitely worth the calories 😋

Proceed with caution when using cajun turkey sausages and poblano peppers 🌶😅 I truly underestimated the heat that this combo would have 😂

All that being said, it did taste fantastic! I sauteed poblanos, onion, tomato, and bacon before adding the sausages. I let them sear on both sides before letting them finish in the oven.

Fried up some bacon and added in zucchini. When that was nearly cooked, I cracked an egg over the top and let that cook 😋

Longaniza stuffed peppers 😍

Filling:
6oz ground beef
6oz longaniza sausage
1/2 sweet onion
1 bell pepper
As much manchego cheese as your ❤️ desires

I cooked the meat, pepper, and onion before layering it in the sweet pepper with shredded manchego cheese. I baked the stuffed peppers until they were soft. I topped them with homemade pico and cilantro crema.

Mixed the flavors of pollo con crema and pollo poblano to make this delicious plate! 😋

I started by searing some chicken thighs, skin-side down. I then added some red potatoes and onion to the pan. I let that roast while I worked on the sauce.

To start the sauce, I charred a couple poblanos and one Hungarian wax pepper. I cut out the seed and chopped them finely before adding them to a pan where I was cooking down a tomato. I added in the peppers and let that simmer for a bit. I blitzed this and added in a little cream cheese and milk to make the sauce a bit creamier. It was absolutely delicious.

Low carb chicken parm 🖤

Pretty proud of this one even though it took a while 🙃

I think I've perfected my dry and wet batters for the airfryer. This was just for one chicken breast, so it could easily be multiplied.

Wet batter:
1 tbsp egg white protein
1 tbsp whole milk
1 tbsp kefir
2 tbsp water
Italian seasonings to taste

Dry batter:
1-1.5 tbsp almond flour
1 tbsp egg white protein
1 tbsp h**p hearts
0.5oz parm
Italian seasonings to taste

First pat chicken dry. Then dip the chicken into the wet batter. Carefully cover all of the chicken in the dry batter...be sure to coat thoroughly! I cooked it at 400 for about 15 mins and an internal temp of 165. In the mean time, I made the sauce and roasted spaghetti squash.

For the sauce:
1 medium tomato
1 Oz parm
1 bone broth packet
4 Oz water

I cooked down one chopped tomato and added in the bone broth powder and water. I let thus boil down by about half before adding the parm.

To finish off this dish, I put a layer of sauce in a skillet, added the spaghetti squash and chicken, topped with extra sauce and cheese, and broiled until the cheese had melted 😋

Chicken tenders atop caramelized pears and onions, topped with a bleu cheese sauce, bleu cheese crumbles, and a drizzle of honey 😍😍

I know bleu cheese isn't for everyone, but I have always loved it! I really wanted to highlight it in this dish.

I started by caramelizing some red onion and pears in a pan. In a separate sauce pan, I sautéed finely chopped red onion. Once the pears and onion had broken down, I added half of the mixture in with the diced onion and blitzed with an immersion blender. To the sauce, I added loads of blue cheese and a little gouda. I let that simmer and reduce while I cooked the chicken. I plated and topped with additional bleu cheese and a drizzle of local honey 😋

Poblano Pepper Beef Roast 😍

This is what happens when you hate tomatoes but have been given soooo many by friends and family.

To a slow-cooker I added:
-Beef roast
-2 charred poblanos
-1 charred bell pepper
-4 small yukon potatoes, peeled
-5 or more garden tomatoes
-1 large onion
- beef bone broth

I seasoned it with generous amounts of Mexican spices and cooked it on low overnight.

Ever tried a donut 🍑 before?!

I would highly recommend trying before it's too late! Delicious on their own, but they also make the perfect pairing with breakfast.

I sauteed some pork breakfast sausage and topped it with a local egg. I couldn't resist having one of these peaches, and it was the sweetest addition to this breakfast 😋

Got the chance to cook for my parents, so I had to whip up some unique flavor profiles! I wasn't even sure about peaches and brussel sprouts, but it works so well!

I sauteed some brussel sprouts, red onion, and peaches together. To meld all the flavors together I seasoned with a generous amount of cinnamon. Cinnamon is one of my favorite spices, and I think it is seriously underutilized! It works with savory stuff too! I topped with mix with some sirloin steak chunks. I wanted the meat flavor to stand alone, so I just seasoned with S&P. I served this all with a side of peppers and mushrooms.

Cream cheese frosting has my heart and the sugar crust on top of this scone is out of this world... SO SO good!

Crab cakes, pork arepas, tres leches cake, picada??...count me in!

in the Brewery District is one of my absolute favorite restaurants in Columbus. They showcase Latin American food beautifully 😍

Not pictured, is the picada that included tostones, chorizo, yuca fries, chicharron, and steak. It was a hit with our table...we ate it before I could grab a pic.

They also serve the most delicious tres leches from ...it is so worth the calories 😋

Banana bread parfait 😍

This one was insanely easy and tastes so good!

Chop up some bananas and dates. For 2 servings, we did one banana and four dates. Cook them down in a pan with a little bit of butter and a ton of cinnamon...like go overboard here! I also toasted some pecans in a dry pan. I ate this over some yogurt and it made for the perfect breakfast.
