When your insurance agents tell you it's ok to be a little adventurous...you should probably listen 👂! So go ahead and welcome summertime in the most exotic, delicious 😋, coconutty style! These brightly crafted Coconut Cuties 🥥 are directly inspired by the sun ☀️ itself, so prepare to melt to it…
Ingredients:
8 egg yolks
1 cup of coconut flakes
6 oz of coconut milk
1 1/4 cup of sugar
2 tablespoons of butter
Preparation:
1- Use good quality, free-range eggs to get a rich yellow color from the yolks.
2- Separate the yolks and mix all ingredients in a food processor or blender until creamy.
3- Grease the mini bundt cake pans (3-in diameter) with butter, and sprinkle them with sugar.
4- Pour the creamy mixture into each of them and cover it with aluminum foil.
5- Bake in a preheated oven at 350°F in a bain-marie (use hot water) for 20-30 minutes.
6- Check on them after 15 minutes. If the Cuties wiggle with a gelatin-like consistency, remove the aluminum foil and bake for another 15 minutes or until golden at the top.
7- To unmold, let it cool just enough to handle with your hands and use a small knife to loosen the sides. Flip and cool in the refrigerator for 1 hour before enjoying it, chilled.
